Honey Garlic Vinaigrette

This is fabulous! I've made it a couple of times now and have since modified it a bit (just personal preference and experimentation...great as written). I add a TBSP of dijon mustard, coarse ground pepper and sea salt, fresh parsley from my garden, combo of olive oil and coconut oil (healthier), combo of rice wine vinegar and cider vinegar. I also mix it in my food processor to help it emulsify. YUMMY!

Hannah's Cream Cheese Caramel Apple Pie

Tasted good, but a little too soupy for me. Maybe I'll try it again and add cornstarch to thicken it up a bit.

Wheat and Barley Bread

We actually made this bread as part of homeschooling...we needed to make something with barley so I thought this looked quick and easy...which it was. However we were pleasantly surprised at how GOOD it was though! SOOOOO yummy! My kids (ages 5 and 3) and hubby couldn't get enough of it. We may have made this for a project, but it will become a staple quick bread around this house! Only thing we did differently was to substitute half the white sugar with brown sugar.

Janet's Rich Banana Bread

This is a great banana bread recipe. Nice and moist, but still fluffy. I actually made mini-muffins instead of a loaf (made 48, cooked for 15 minutes). I did add some spices (cinn., nutmeg, allspice, cloves) and sprinkled some brown sugar on top. Left out the walnuts due to families nut allergies. My two yr. old can't stop eating them! Will use this recipe again.

Cranberry Upside-Down Coffee Cake

This was delicious. My whole family loved it. I left out the pecans 'cause my husband and daughter have nut allergies so I increased the amount of cranberries. Will make again.

Chicken Piccata III

The chicken itself was good but the sauce was WAY too lemony. It came out too bitter. Better off going with one of the other chicken piccata recipes on this site.

Cabbage Roll Casserole

I've never had cabbage rolls so can't attest to this tasting just like the real thing, but it sure is good!!! My 2yr old and 4yr old liked it and ate every last bite. My husband said "make again" after his very first bite. I did add more seasonings to the ground beef and added some ground pork as well (had some that I needed to use up). I accidently added a bit too much rice so I had to up the liquid ingredients to compensate. I also added a can of cream of mushroom soup to the tomato sauce. Gave it a little creaminess. Yummy! Will make again.

Quick Quiche

I came across this looking for a crustless quiche (just didn't feel like making a crust) and this was great. My kids liked it too. Was great the following morning cold too. I sauted the onions in some of the bacon drippins (for extra flavor), and added some broccoli left over from the night before. I did have to cook this much longer than the stated cooking time to get my eggs to set up (just short of an hour). Only thing I would do differntly would be to cut the butter down to about half. Came out a little oily ('course that could also be from my onions sauted in bacon drippings). I can't wait to try other fillers! Yummy!

Chocolate Mint Candies Cookies

These cookies are AMAZING! Taste just like a girl scout thin mint. Instead of melting a candy on top, I used a bag of chopped andies candies mixed into the batter. Second time I made them, I split the batter in two and added peanut butter chips to one, and the mints to the other. Both were delicious. My husband and son actually liked the peanut butter ones better, my daughter and I liked the mint ones better. I think from now on when I make these I will have to do the half & half batch again. Definately a keeper!

Chicken Wild Rice Soup I

Based on taste I would give this recipe 5 stars. But had to give it 4 stars due the fact that this soup goes beyond being just thick. Definately thicker than any chowder I've ever seen. I had to add an extra 6 cups of liquid (4 cups broth, 2 cups half & half...wanted it to still be creamy) to make it a soup and not a chicken and rice meal. Other than adding liquid, I also added garlic with the onions/carrots, left out the almonds (my husband and daughter have nut allergies), and had a small amount left of spinach that I chopped and added in (next time will add more). Overall: DELICIOUS!!! The family loved it and (with my own twist on it) have asked me to keep this in dinner rotation. Served with salad and crusty bread.
