Chocolate Mint Cookies I

This cookie is SO good! I followed the recipe exactly and had perfect puffed cookies. I think the people that had a problem with flat cookies was that when they melted the butter and sugar, they OVER melted. I actually did mine in the microwave. I did it for 1 min. with the butter, sugar and water and then just wisked until all the butter was melted. Then added the chips, microwaved for 1 more min. and then used a wisk to stir the chips until they were all melted. The batter at that point it still pretty thick, not thin like it would be if everything was much to hot. Make sure to let it cool well! Also, when I chilled the dough, I put it in a rectangular pan and put it in the fridge. Let it cool all the way through! I promise, your cookies won't be flat! I WILL make this recipe over and over! My kids and husband ate them all up!

Fudge

I have a very similar recipe I have always used for this called 4 minute fudge. I love it. I bet money that the people who said it never set up didn't use SWEETENED condensed milk. I bet they used only condensed milk, I have seen it happen before. The sweetened condensed milk is very thick. I am almost positive that is why they had problems. It won't set with out the right kind!

Oatmeal and Applesauce Pancakes

I made these today and they were really good! I had to make a double recipe, (I have 5 kids), my batter was perfect, not to thick, not to thin. I did add 1TBS. sugar per batch as per others suggestions and it was just right! Great flavor! You really have to cook these low and slow for them to cook all the way through and not burn, but they are worth the wait! I really enjoyed these as did my family! We will make them again for sure!

Hawaiian Wedding Cake II

This is a great cake, but being the baker that I am, I had to make it my way, lol. I made a double batch because I am going to a big party tomorrow. I used 2 yellow cakes, used pineapple juice instead of water and added a 20 oz. can of drained crushed pineapple and about a cup of toasted coconut. I added it right to the cake batter and baked it in the cake. The cake is SOO moist! The rest I pretty much did the way the recipe called for. I also poked holes in the cake to let all the toppings sink right in. This cake is super delish!! Thanks for the recipe!

Roasted Red Potato Salad

Really love this potato salad, but I did add different things. First I seasoned the potatoes very well before I roasted them. With things like garlic, rosemary, onion. Instead of adding chopped white onion, I added scallion and chives instead. I also chopped fresh dill and added that. I mixed the mayo. with some spicy brown mustard and mixed that in. The longer you let this sit, the more the flavors come out! Delish!

Delicious Christmas Cookies

We liked this cookie! I did, as other users suggested, and used more flour. I ended up using 1C. and the dough turned out perfect. I chilled in the fridge for 45 mins, then added the chocolate. I only had about 1C. of M&M's so I also used some white chocolate chips and regular chocolate chips. It added some extra flavor and my kids loved them! I rolled them into balls and baked them. They held the shape perfectly and didn't come out flat at all! Make sure you don't melt the butter, just soften. That is a mistake a lot of people make when baking cookies! I will make these again. Vanilla Chip Cherry Cookies

I think these cookies are delicious! My kids and husband agree! I did only use 1/2 a bag of white chocolate chips, the whole bag just seemed like to much! They came out so good! I gave them away in my Christmas cookie tins and everyone loved them! Thanks so much for the recipe!

Banana Cream Pie I

Loved this! Pudding came out nice and thick, perfect consistency. To add more banana flavor to the pudding, I mashed one full banana and added it right before I put the pudding in the shell. One thing I have to say to all of you is DO NOT BAKE THIS PIE!!! Pudding pies are not to be baked! Just chill thoroughly and enjoy! Delicious!

Easy Biscuits

Delicious! I only had enough self rising for 1 recipe, but needed to double it as I have a large family. So I used the SR flour I had and then added 2 1/4 C. all purpose flour, a 1/2T. salt. 1t. baking powder and 3/4 t. baking soda. I also added 2 T. of sugar. Other than that, I followed the recipe exactly. I baked them in a baking pan very close to each other and they rose perfectly! Nice taste too! OH! And I used butter flavored Crisco :)

Peach Cobbler II

LOVED this recipe, as did my whole family! We did as others suggested and reduced the sugar to 1C, (1/2 brown and 1/2 white), and honestly, I think you could easily go down to 3/4C, and I will do so next time as it was still VERY sweet even at 1 full cup! I also only added 1C of water. Thanks for this recipe, it is a keeper!

Chocolate Muffins

Great muffins! I also use 1/2 brown and 1/2 white sugar. I added an extra 1/4C. cocoa powder, (didn't omit any flour) and mixed in a TBS of espresso powder in the water. I added about a cup of chips and also a tsp. of chocolate extract for more chocolate flavor. So with these changes, these muffins were a big hit here!!

Sloppy Joes

I really liked this! I would give it 5 stars, but I did adjust the recipe a bit. I used only one red onion. I cut the BBQ sauce down to 1/2C. and added about 1/4C Worcestershire sauce. Other than that, I followed the recipe. Kids loved it! Thanks for sharing!!

Ranger Joe Cookies

Really liked these cookies. I think next time I will add about a 1/2t. of salt as I think it would help bring out the flavor a bit better, (I always bake with unsalted butter). But my kids really liked them. I also think these would be awesome with some type of chips, IE: peanut butter, chocolate chip.

Fresh Strawberry Upside Down Cake

Loved it! My whole family did! SUPER easy quick cake. I only had orange jello and it worked perfectly! I used a non stick bunt pan and it was so pretty, and came out easy! Would be even better with some whipped cream on top! Thanks for the recipe!

Zucchini Pineapple Bread I

This was an awesome modification of the original. I did a little test myself and used 1 1/2C. whole wheat flour and 1 1/2C white flour. It was wonderful! My kids loved it and had no idea it was made with whole wheat flour and no fat! Thanks for the recipe!

Zucchini Pineapple Bread I

WOW this is such a great bread! I did modify it with others suggestions. I used applesauce instead of oil, used 1/2C. white sugar and 1/2C brown sugar. I also used 1 1/2C. whole wheat flour and 1 1/2C. white flour. 3t. cinnamon and a full t. of fresh grated nutmeg. It was awesome! My kids never missed the fat and ate it all up as soon as it cooled!

My Favorite Sugar Cookies

In my opinion, you have to follow the basic cookie technique with these cookies. Cream shorting and sugar, add eggs, milk then vanilla. Mix in dry ingredients. I cut out 1/4 C. of flour as per other reviews and added a little lemon zest. They are perfect to roll out and had a nice flavor! Perfect for decorating!
