Parmesan Chicken II

I did listen to other reviewers and boil the drumsticks prior to baking to reduce the bloodiness of the drumstick and it worked perfectly! To give a little extra crunch I added cornmeal to the parmesan the second time I made it. Thanks for the recipe!

Slovak Stuffed Cabbage

I followed this recipe exactly (except that to make it Gluten Free I couldn't use the condensed tomato soup so I exchanged it for GF tomato soup and decreased the amount of water we added) and it is fantastic as written! I had never added sauerkraut or bacon to my stuffed cabbage before and I'm so glad that I did because it made the sauce absolutely delicious. Thank you for the recipe!

Ethiopian Cabbage Dish

We truly enjoyed this dish. We eat cabbage quite often and it was a nice change to how I normally cook it. Plus, you can add/subtract spices per personal tastes very easily so depending on what we are eating it with determines how much/little we add.

They are delicious, but you definitely have to make sure not to eat too many! I used them to make ice cream sandwhiches and they were fantastic, so thank you for the recipe!

Butternut Squash with Onions and Pecans

Sorry, but there was too much onion in this to make it enjoyable, and I love onions! The butternut does not have a strong enough flavor to hold against an entire onion; perhaps, if less was used this would taste better but I'm not using another 40 minutes of my life to find out. Thanks for the interesting side dish though, always worth a try once :)

Refried Beans Without the Refry

These are fantastic! The best part was that all you have to do is put them in the crock pot and walk away, can't be easier! I did use all black beans, because that was all I had on hand and it worked perfectly. Can't wait to try this with pinto beans :)

Creamy Rice Pudding

The only reason that I'm giving this four stars instead of five is that there is far too many raisins! Next time I'll cut back to 1/3 cup and try that, otherwise I won't change a thing. Also, the consistency of this pudding was perfect (and I did use skim milk, I just let it simmer for 20 minutes like the recipe instructed). Thanks for the great recipe!

French Fried Potatoes

Not being able to eat french fries at most restaurants because they are either coated in flour or cooked in the same grease as other breaded things, I have been searching for a way to make crispy fries at home. This is it! I am so happy to finally be able to enjoy fries every once in a while again! Thank you for the recipe, I'll be sharing it with my whole family.

Makhani Chicken (Indian Butter Chicken)

Sorry, but I wasn't very impressed with this dish. Too much tomato made the sauce very sour. Additionally, for the flavor that I got out of this dish, there are too many ingredients and too much time to put it all together. Marinading the chicken in the yogurt mixture didn't really add anything spectacular at all either. All-in-all too much effort and too many ingredients made a sour meal.

Curried Coconut Chicken

This was a simple, quick, and delicious recipe! My husband had two servings, which rarely happens, so I would give this a six if I could. The only drawback is that our entire condo is consumed in curry smell . . . hope the neighbors don't mind! Thank you again.

Spicy Chicken Breasts

This was absolutely wonderful! First, I flattened my chicken breasts, added the rub, grilled them up and let them cool down. Once cool, I cut them into strips and ate them alongside "Minty Orzo Lentil and Feta Salad" and it made the perfect picnic combo, and leftovers for lunch at work. Great recipe Barbara!

Minty Orzo Lentil and Feta Salad

I tried this dish because I had never eaten lentils before and this looked absolutely delicious . . . and it is! The only change that I made was to use rice instead of Orzo (glueten free this way). We served this as a cold salad along with the spicy chicken breasts from this site (we cooked the chicken and let it cool). Absolutely FANTASTIC! Thanks for the recipe!

Oven Baked Jambalaya

I had leftover ham from Christmas and was looking through the recipes that used ham and I am glad that I found this one. The flavors in this recipe are just fantastic! I do have a warning though . . . the recipe says "squeeze tomatoes to break up into pieces" and being that I normally cut them with my cooking scissors, I was very excited to try this method. Tomato number two did me in, I squeezed it and it 'popped'. I laughed for about a half an hour because that's how long it took me to get the tomato juices off of my floor, walls and ceiling. After that, I dumped all of the tomatoes into the roaster and then squeezed them with my hand inside the empty 28 ounce tomato can. I will be making this again because it is DELICIOUS . . . but I'll probably go back to cutting the tomatoes :)

Sugar 'n' Spice Nuts

I read a few reviews that complained of "sticky nuts the next day" and I will say that I did not have that problem at all. These were absolutely wonderful! I used them on a salad with fresh mushrooms, blue cheese, dried cranberries, baby greens and a basalmic vinagrette reduction for the dressing and it was a perfect Holiday treat! Thank you for the recipe :)

Cuban Ropa Vieja

I found this recipe about a year and a half ago on All Recipes and have been making it ever since. The first time I made this, I followed the recipe exactly and it was perfect as is. However, I have changed it up a few times for personal preferences this is what works for my family the best: I normally use a decently sized roast and combine the cumin with some oregano, salt, pepper and paprika and use it as a rub on the meat, which smells fantastic when you sear each side. After that I throw it in the slow cooker with the onion, garlic (normally around 4 cloves, love garlic!), handfull of choped up cilantro, one choped (deseeded) jalapeno, 1 29oz can crushed tomato, 1 29oz can tomato sauce, a dash of white vinegar and a dash of sugar. Then, after it's done cooking, there is a nice sauce left over to scoop over the top. My family asks me to make this recipe for them all the time, and it's just so easy (and GLUTEN FREE!).
