Easy Spicy Thai Slow Cooker Chicken

Reviewed: Jan. 20, 2011
I did enjoy this dish very much. However, next time, I will make one modification - I will use half the amount of Asian Dressing. That's more than enough. Normally I don't modify a recipe until after I've tried it as is, but I had to make two changes, one out of neccessity and the other by choice. First, I didn't have any ginger-garlic paste so I used 1 tbsp each of minced galic cloves and minced ginger. Second, there were no vegetables! Lots of chicken but no veggies. So I threw in 2 diagonally sliced carrots, 1 large rough chopped onion, and 8 oz fresh button mushrooms, then layered the chicken over it and then the sauce. An hour before it was done I tossed in 1 rough chopped red pepper. Wonderful!

Pineapple Coconut Zucchini Bread

Reviewed: Jul. 14, 2009
This is an awesome recipe!!! Great flavours that aren't overpowering. VERY moist! I had a small problem ... not with the recipe, with my zucchini. When I grated up my zucchini, I didn't have quite 3 cups, so I grated up a carrot to make up the difference. Turned out great! This is a keeper!!!

Yummy Tater Tot Casserole

This was good - but way too rich. And that's after I cut the butter out of the recipe.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Mar. 26, 2011
Wow! Very good! The fruit salsa was so easy to whip up and was incredibly delicious. The cinnamon tortillas were great! The only problem I had with them was the oven temperature and the baking time. After two pans of burnt tortilla chips I finally got the right settings for baking these babies the right way. My oven is true to temp .. it does not run hot - I found the 350 degree temp called for was way too hot. Baking these chips at 325 degrees was perfect. Also the baking time - even at 325 degrees, 8 minutes was sufficient to crisp the chips up. Now that I have the kinks worked out, the recipe is great!

Rich Cheese Pie

Reviewed: Apr. 2, 2010
Really should rate this at a 3, but I am giving it a 4 because it has so much potential! First of all, an absolute MUST, is baking the pie crust for 8-10 mins before filling otherwise you end up with a soggy bottom. Cover the edges with tin foil or a pie edge cover because they WILL burn by the end of baking, specially at that temp. As for the temp, I would reduce it to 400F next time, which is plenty hot enough to bake a quiche. I did add some onions that I softened in the microwave and some garlic powder - I would add more next time. Also, I would change up the cheese and do a mixture of cheeses like cheddar, mozza, parm, and asiago. The milk and cream need to be reduced to allow the egg to set properly - I would reduce the milk and cream both to 3/4 cup EACH. The next time I make this with the changes I've noted, I will update.

Layered Fiesta Casserole

Reviewed: Mar. 18, 2010
This was pretty good but I found it quite bland. It's something I will try again, but I will have to make a few adjustments. Such adding a bit of salt, as well as some Mexican seasoning.

Irish Cream Brownies

Reviewed: Apr. 17, 2010
These brownies are different from the norm. Definitely a special occasion brownie. They were easy to make, but just a heads up - the frosting/topping is very runny. It needs to set up in the fridge before being cut.

Irish Egg Rolls

Reviewed: Mar. 19, 2010
I LOVE corned beef & cabbage. It's one of my favourite meals! And when I saw this recipe, I thought it would soooo good! How could it not be? Unfortunately, it's did not turn out as hoped. I don't know how yummy corned beef & cabbage stuffed into a yummy egg roll skin can possibly be so tasteless, but it is. Wish it weren't so. Definitely not a recipe I will try again.

Greek Salad

Reviewed: May 23, 2011
The dressing recipe was amazing! I did make one addition - I added a clove of minced garlic to the dressing. It just seemed wrong not to. And I made one change - as suggested by other reviewers, I used olive oil instead of veg oil. I have tried so many recipes in the past that I could not choke down, mainly because they used red wine vinegar, but this recipe was excellent. A definite keeper!

Pork Chops a la Slow Cooker

Reviewed: Sep. 5, 2010
This is one of the easiest, tastiest ways to prepare pork chops. A definite keeper. The pork chops always come out tender and savoury. Served with creamed(whipped) potatoes and a veggie, you have a perfect dinner.

Caramel Frosting V

Reviewed: Sep. 5, 2010
I would really love to give this recipe a higher rating because it is SO DELICIOUS, but I can't justify doing that because the results aren't "as advertised". I will definitely make this again but I will not be using it as a frosting - only as a filling. The only way to use this as a frosting is to make sure whatever you frost remains refrigerated at all times - it can never come to room temp or it will simply "melt" off the baked good. I tried all the tricks that were suggested and the best I could do was light and fluffy when refrigerated. Basically - perfect for a cake or cupcake filling - just not the best for a room temp frosting.

Bacon-Roasted Chicken with Potatoes

Reviewed: Mar. 23, 2010
This was a really good recipe; a definite keeper. I used boneless, skinless chicken thighs and cut up russet potatoes (it's what I had in the house) and it turned out pretty good. However, I will make some adjustments next time. 1) I will rub part of the spice mixture on the chicken before laying pieces of bacon over it. 2) I will toss the potatoes and onion with the spice mixture before placing them in the dish around the chicken. 3) I will reduce the amount of spice mixture - this makes too much. A little goes a long way!

Delectable Marinated Chicken

Reviewed: Jul. 26, 2012
This marinade was ok - flavourful and made the chicken moist. However I wouldn't say it was delectable or give it 5 stars. I did have to make two changes out of need - first, I didn't have garlic salt so I used garlic powder and seeing as how there's more than enough sodium in the Worcestershire sauce, soy sauce (even low sodium), and teriyaki sauce, making this substitution was obviously a healthier option. Second, I didn't have sesame seeds, so I subbed with 1 tbsp of sesame oil and cut the canola oil back to 2tbsp.

Garlic Chicken Fried Chicken

Reviewed: Oct. 31, 2011
This dish was delicious. The chicken was tender, the flavour amazing. My only reservation was the amount of oil used. If I make this again, I will use just enough oil to brown the chicken on both sides, then finish them off in the oven.

Aaron's Missouri Burger

Reviewed: May 20, 2011
The burgers turned out great! I used extra lean beef and this recipe made the meat quite tender, much less "dry". Found it spicy with the red chili pepper ... very good but not an every day burger recipe for me, more of a special occasion burger.

This was ok. Seemed to lack flavour actually. And definitely did not need a pinch of salt - the ham made it salty enough.

Totally Tangy Baked French Fries

Reviewed: Jun. 25, 2010
These fries were good. I guess I was expecting more because of all the 5 stars. It was an easy recipe to make, the flavour was pretty good, but not anything "great". Some of the topping got a bit burnt even following the directions to a "T". When I make these again, I will precook the wedges in the microwave a bit, then toss them with the topping, then bake them to get the crispy texture. Hopefully that will make them more 5 star-worthy.
