Ann's Dirty Rice

This was really tasty given that the only seasonings are salt and pepper! It's so very simple, incredibly easy to make, and unbelievably good. I think the next time I make it I will experiment with some Cajun seasoning but otherwise, it's perfect the way it is.

Slow Cooker Italian Chicken Alfredo

This dish is pretty tasty but ... it definitely needs more garlic. It would also benefit from sliced onion and extra mushrooms. UPDATE - So when I reheated this for leftovers I added about 1/4 cup of Kraft Calorie-Wise Dressing, 1/2 c up diced red onion, 1/2 cup diced red pepper and two more garlic cloves minced. SOOOO much better this time around!

Cinnamon Coffee Frosting

Truly great frosting!!! A definite keeper. Very nice flavour of coffee and cinnamon and the frosting turns out incredibly light and fluffy.

Mini Pumpkin Whoopie Pies

WOW! So delicious! So easy to make despite the the number of ingredients. The only word of caution I have is the cream cheese filling is extremely runny made as is, even after being refrigerated for 3 hours. Next time I make these (and I will!) I will add more confectioners sugar while mixing the filling to stiffen it a bit more.

Irish Cream Brownies

These brownies are different from the norm. Definitely a special occasion brownie. They were easy to make, but just a heads up - the frosting/topping is very runny. It needs to set up in the fridge before being cut.

Chocolate Mint Cookies I

These little gems are wonderful! So easy to mix! up. I used my small scoop to form the balls and that cuts the work in 1/2. I didn't have Andes style mints so I used Mint White Chocolate wafers. They look so pretty and taste delicious! A definite keeper. But because they are so rich, I will probably reserve them for special occassions rather than use it as an every day cookie.

Chicken Fajita Melts

Unfortunately, I have to give this a 3 star. It was edible but nothing special. I think it has potential to be so much better. The bread needs to be lightly toasted or broiled before putting the salsa and chicken misture on it or it becomes seriously soggy. With some tweaking, I think this recipe could be far better than it currently is.

Spinach and Feta Pita Bake

After the first bite, I wasn't too sure about it. After the third bite, I was totally sold! It is delicious! But very rich. I would definitely keep this to an appetizer rather than a meal because of it's richness. This ones a keeper!

Mocha Chocolate Chip Banana Muffins

WOW! They were amazing! Just loved these babies! Very flavourful, it was almost like eating a cupcake!!! The only complaint I had was the method of mixing - it's the first time I have used my food processor to mix up muffin batter and it wasn't bad until I went to mix in the chocolate chips with a spoon and to spoon the batter out into the muffin cups - I found it a little awkward. Other than that, it was all great!

Oatmeal Waffles

I was a little concerned when I mixed these up for two reasons - 1) because the molasses is difficult to mix in you really need to mix well, even when you think it won't come together, keep mixing, it will and 2) the batter was a quite runny so I had to add another 2-3 tbsp of flour otherwise it would have run right off the waffle iron. Other than that, it was a GREAT waffle recipe. I loved that it used oatmeal, such a heart-healthy grain! One other tip - if you are not eating the waffles right away, make sure to place them on cooling racks so they will retain their crispy just-off-the-waffle-iron texture otherwise they will become very soft.

Rich Cheese Pie

Really should rate this at a 3, but I am giving it a 4 because it has so much potential! First of all, an absolute MUST, is baking the pie crust for 8-10 mins before filling otherwise you end up with a soggy bottom. Cover the edges with tin foil or a pie edge cover because they WILL burn by the end of baking, specially at that temp. As for the temp, I would reduce it to 400F next time, which is plenty hot enough to bake a quiche. I did add some onions that I softened in the microwave and some garlic powder - I would add more next time. Also, I would change up the cheese and do a mixture of cheeses like cheddar, mozza, parm, and asiago. The milk and cream need to be reduced to allow the egg to set properly - I would reduce the milk and cream both to 3/4 cup EACH. The next time I make this with the changes I've noted, I will update.

Mouth-Watering Stuffed Mushrooms

These babies went like hotcakes at my family potluck! They were delicious! I did make two changes to the recipe - I reduced the cayenne pepper to 1/8 tsp from 1/4 tsp only because I knew the majority of people I was making these for would have an issue with the heat and I also added 2 tbsp shredded Asiago cheese to the mixture (because I LOVE Asiago).

Bacon Cheddar Deviled Eggs

Made as the recipe called for, the egg filling was good. But to me, it lacked a little bit of sweetness. So, I added 1 tbsp of sweet green relish. Wow! They were delicious! I think with that small adjustment, this recipe is now a keeper!

Bacon-Roasted Chicken with Potatoes

This was a really good recipe; a definite keeper. I used boneless, skinless chicken thighs and cut up russet potatoes (it's what I had in the house) and it turned out pretty good. However, I will make some adjustments next time. 1) I will rub part of the spice mixture on the chicken before laying pieces of bacon over it. 2) I will toss the potatoes and onion with the spice mixture before placing them in the dish around the chicken. 3) I will reduce the amount of spice mixture - this makes too much. A little goes a long way!

Maple Cookies

This cookie is quite good! It mixed up well, rolled well, and baked well. A past reviewer recommended adding 2 tsp maple extract. I added 1 tsp and I am so glad I did because even with the maple syrup and 1 tsp maple extract, it's still a mild flavour. I will definitely make these cookies again, but I will use the full 2 tsp maple extract. I also have VE Canadian Maple Chips (like chocolate chips) and I think I will try throwing some of those in too to see what the result would be.

Double Tomato Bruschetta

This was a good recipe! Loved all the garlic in it - if you're not a garlic lover, I would recommend cutting back to two cloves or even just one. I used white balsamic vinegar instead of regular only because I prefer it. The bruschetta was interesting with the vinegar in it - added a bit of sour to the sweet tomatoes. Altogether a good recipe. I will defintely keep this to make again, perhaps for company.

Irish Egg Rolls

I LOVE corned beef & cabbage. It's one of my favourite meals! And when I saw this recipe, I thought it would soooo good! How could it not be? Unfortunately, it's did not turn out as hoped. I don't know how yummy corned beef & cabbage stuffed into a yummy egg roll skin can possibly be so tasteless, but it is. Wish it weren't so. Definitely not a recipe I will try again.
