Erin's Indonesian Chicken

Reviewed: Apr. 18, 2011
I was very pleasantly surprised by this recipe. It was great! Easy to make, tasted great, and used ingredients that I always have on hand. I did make two changes - or rather additions. I added two minced garlic cloves and 1 tsp minced ginger. To me, it's just not an asian dish without garlic and ginger. Thanks so much for sharing the recipe!

Fish in Foil

Reviewed: Apr. 15, 2011
This recipe was a very big disappointment. I was sure it would be a hit, but it wasn't. The only flavour that remotely stood out was the lemon. Otherwise, it was really quite flavourless. I couldn't even finish it.

Campbell's® Golden Chicken with Noodles

Reviewed: Apr. 10, 2011
The only two good things I could say about this recipes is that it was edible and the chicken was tender. Other than that, it was bland, bland, and bland. Very disappointing, particularly since it came from Campbell's. This is definitely NOT something I would make again.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Mar. 26, 2011
Wow! Very good! The fruit salsa was so easy to whip up and was incredibly delicious. The cinnamon tortillas were great! The only problem I had with them was the oven temperature and the baking time. After two pans of burnt tortilla chips I finally got the right settings for baking these babies the right way. My oven is true to temp .. it does not run hot - I found the 350 degree temp called for was way too hot. Baking these chips at 325 degrees was perfect. Also the baking time - even at 325 degrees, 8 minutes was sufficient to crisp the chips up. Now that I have the kinks worked out, the recipe is great!

Crunchy Pumpkin Pie Granola

Reviewed: Feb. 16, 2011
This is a pretty good recipe for a reduced fat granola. Love the pecans! Not the nut once commonly sees in granola. I use this granola on yogurt to make it more palatable - does the trick.

Cilantro Tomato Corn Salad

Reviewed: Feb. 16, 2011
This was soooo incredibly good! The flavours complimented each other perfectly! I did make one change - and only because I am cutting calories. I omitted the melted butter and replaced it with 1 tbsp of lime juice. I don't think it could have worked better! Thanks so much for the recipe.

Easy Spicy Thai Slow Cooker Chicken

Reviewed: Jan. 20, 2011
I did enjoy this dish very much. However, next time, I will make one modification - I will use half the amount of Asian Dressing. That's more than enough. Normally I don't modify a recipe until after I've tried it as is, but I had to make two changes, one out of neccessity and the other by choice. First, I didn't have any ginger-garlic paste so I used 1 tbsp each of minced galic cloves and minced ginger. Second, there were no vegetables! Lots of chicken but no veggies. So I threw in 2 diagonally sliced carrots, 1 large rough chopped onion, and 8 oz fresh button mushrooms, then layered the chicken over it and then the sauce. An hour before it was done I tossed in 1 rough chopped red pepper. Wonderful!

Neat Sloppy Joes

Reviewed: Jan. 20, 2011
This was incredibly good! Very easy to make and very tasty. I didn't use the celery as I can't stand celery ... noxious weed that it is; so I subbed green pepper in its place. The only other change I would make to it would be to add an extra tablespoon of vinegar to give it a little more edge. This is a definite keeper!!!

Tuscan Soup

Reviewed: Sep. 20, 2010
This soup was great!!! I did drain the sausage which I am glad I did, because it was fatty! I made a couple of changes - I used kale instead of spinach because that's what Olive Garden uses and I truly enjoy that. I also used 3 extra cups of broth because I found that 6 cups just wasn't enough. Also, I didn't have evaporated milk so I used 2% milk. Unfortunately 1/2 of 2% milk just doesn't cut it. I actually added a total of 3 cups of milk. Made the soup JUST like OG!

Slow Cooker Nacho Chicken and Rice Wraps

Reviewed: Sep. 18, 2010
This recipe was fairly good. It had lots of flavour and was really easy to put together. It could even be eaten on its own, without the tortillas.

Pork Chops a la Slow Cooker

Reviewed: Sep. 5, 2010
This is one of the easiest, tastiest ways to prepare pork chops. A definite keeper. The pork chops always come out tender and savoury. Served with creamed(whipped) potatoes and a veggie, you have a perfect dinner.

Caramel Frosting V

Reviewed: Sep. 5, 2010
I would really love to give this recipe a higher rating because it is SO DELICIOUS, but I can't justify doing that because the results aren't "as advertised". I will definitely make this again but I will not be using it as a frosting - only as a filling. The only way to use this as a frosting is to make sure whatever you frost remains refrigerated at all times - it can never come to room temp or it will simply "melt" off the baked good. I tried all the tricks that were suggested and the best I could do was light and fluffy when refrigerated. Basically - perfect for a cake or cupcake filling - just not the best for a room temp frosting.

Coconut Rice

Reviewed: Jul. 31, 2010
This Coconut Rice is delicious! Normally I don't make changes, but after reading previous reviews, I did make some changes. First of all, I reduced the amount of rice to 1-1/4cups instead of 2 cups. Also, I love curry so I doubled the amount of curry. I thought the coconut flavour really came through - I know other reviewers had trouble with that. Definitely a keeper!

Grilled Sausage with Potatoes and Green Beans

Reviewed: Jul. 8, 2010
This was really good! I had to make one change - which was to use fresh Italian sausage instead of the smoked sausage (not a big fan) and it turned out well. I wanted more bang for my buck veggie-wise, so I added fresh button mushrooms and sliced red onion to the packets too ... wow! The veggies were just amazing, particularly the mushrooms! A definite keeper!

Totally Tangy Baked French Fries

Reviewed: Jun. 25, 2010
These fries were good. I guess I was expecting more because of all the 5 stars. It was an easy recipe to make, the flavour was pretty good, but not anything "great". Some of the topping got a bit burnt even following the directions to a "T". When I make these again, I will precook the wedges in the microwave a bit, then toss them with the topping, then bake them to get the crispy texture. Hopefully that will make them more 5 star-worthy.

Taco Stuffed Shells

Reviewed: Jun. 3, 2010
This recipe was excellent! I loved it! So easy and so amazingly flavourful. The only change I made was to use refried beans that had green chiles in them too, just because I like my food spicy. I did end up with left over filling, so I froze with plans to use it on nachos some night.

Tender Italian Baked Chicken

Reviewed: May 21, 2010
This turned out really well. The chicken was moist and tender and the beading kept it's dry texture. A definite keeper.

Honey Ribs

Reviewed: May 15, 2010
This was a great sauce! Very tasty. After reading some past reviews about the thinness of the sauce, I decided to cut down on the amount of beef broth, but other than that, I followed the recipe exactly. It was great! I think I will try this next on a steak as a marinade before grilling.
