Ann's Dirty Rice

This was really tasty given that the only seasonings are salt and pepper! It's so very simple, incredibly easy to make, and unbelievably good. I think the next time I make it I will experiment with some Cajun seasoning but otherwise, it's perfect the way it is.

Banana Cake VI

Great cake! I was leery of baking the cake on 275 and then placing it in the freezer .... but the submitter and the reviewers were adamant about it so I thought I would try it at least once. Wow! It worked really well. Although, I admit I had to bake the cake an additional 20 mins as the 60 just wasn't enough. I also found that that 1/2 tsp just isn't enough. The next time I make it, I will up the salt to 3/4 tsp and see how that works.

Salsa Chicken Rice Casserole

Great recipe! There's a lot of prep work for this recipe, but well worth taking the time to make it. To make life easier, I would suggest cooking the rice and chicken the night before so that the only thing left to do the day you want to make it is to layer it and bake it (particularly if you are coming home from work). I made a change to the onions - I microwaved them for 1 min to make sure they would be cooked all the way through in the casserole. Also, I have a hard time making any casserole without vegetables. It just seems wrong. So I chopped up 1/2 green pepper, 1 red pepper, and 4 oz of fresh mushrooms, microwaved them for 1 min and added them with the chicken. It was soooo good!

Delectable Marinated Chicken

This marinade was ok - flavourful and made the chicken moist. However I wouldn't say it was delectable or give it 5 stars. I did have to make two changes out of need - first, I didn't have garlic salt so I used garlic powder and seeing as how there's more than enough sodium in the Worcestershire sauce, soy sauce (even low sodium), and teriyaki sauce, making this substitution was obviously a healthier option. Second, I didn't have sesame seeds, so I subbed with 1 tbsp of sesame oil and cut the canola oil back to 2tbsp.

Slow Cooker Cilantro Lime Chicken

Absolutely delicious! I used boneless, skinless chicken thighs, doubled the cilantro (because I am a cilantro freak), stir-fried some peppers and onions and served them with the shredded chicken as filling for soft tacos. Excellent! A definite keeper.

Mushroom Turnovers

This is my Holiday staple for parties ever since I found it in a Philly Cream Cheese cookbook! Not a year goes by that I don't make these. In recent years, I have changed one thing about the recipe - instead of making them as turnovers, I actually make them as mini tarts.

Neat Sloppy Joes

This was incredibly good! Very easy to make and very tasty. I didn't use the celery as I can't stand celery ... noxious weed that it is; so I subbed green pepper in its place. The only other change I would make to it would be to add an extra tablespoon of vinegar to give it a little more edge. This is a definite keeper!!!

Garlic Chicken Fried Chicken

This dish was delicious. The chicken was tender, the flavour amazing. My only reservation was the amount of oil used. If I make this again, I will use just enough oil to brown the chicken on both sides, then finish them off in the oven.
