Fluffy Pancakes

Never buying box mix again! This was so easy, the ingredients were all in the cupboard, and they turned out fantastic the first time! Don't overstir and they will be light and fluffy :) Enjoy!

Eggless Peanut Butter Cookies

These are great cookies for having no eggs in them. I followed other reviewers advice and added 1/2 extra cup of flour and substituted buttermilk for 1% plus 1 T. white vinegar. I also used 1/2c shortening and 1/2c salted butter. They turned out slightly crispy on the edges and soft in the middle. If your cookies are rising too much during the last few minutes of baking, take out the pan and slam it on a counter to make them fall and they turn out much more chewy instead of cakey. I will definitely make these again.

Baked Ziti I

One word...Yum! You need to cover it before baking, as stated in previous reviews. Needs no additions or subtractions in my opinion. I have used this with penne pasta too and it tastes wonderful as well. It is always a home run for me.

Jay's Signature Pizza Crust

This has become my go to pizza crust recipe. It is easy and quick (minus the time it takes for the dough to rise). I use it once a week for pizza night at my house. I can make 2 pizzas with this recipe. I do add a little garlic powder to the mix and brush the pizza pan with olive oil before baking. Much bettter for you (and cheaper) than ordering out.

The Best Rolled Sugar Cookies

I am a first timer with rolled sugar cookies and I must say that this recipe is a keeper. I followed the recipe as written. The dough was not terribly sticky or hard to work with. After I rolled out the same dough a few times, though, I did need to dust lightly with powdered sugar. All I can say is WOW!

Moist and Chewy Peanut Butter Cookies

Perfectly crisp on the edges and soft and chewy in the middle. I did use 3/4 c. reduced fat peanut butter instead of the 1/2 c. called for. This will be my trusty standby recipe for Peanut Butter Cookies. No one can resist :)
