Strawberry Bread

Made this recipe exactly as posted the first time. It was great, but a little on the dry side. Next time I reduced the oil to one cup and added 1/2 cup applesauce. It was more moist. I now use this as my basic bread recipe, and switch up the fruit. I have made banana-strawberry bread, banana bread and pumpkin bread so far! Thanks for this great basic and adaptable recipe!

Homemade Pancake Mix

This mix was great! And we loved that we could make a bunch of mix ahead of time, and have it on hand for the future. We made ours with almond milk because I cannot eat dairy right now - they turned out great, but were a little dense. The next time we made them, we added two tablespoons of canola oil, and they were much more fluffy!

Incredibly Cheesy Turkey Meatloaf

This recipe is great as is, but definitely add some grated zucchini and carrot as suggested. My whole family loves this - even my picky toddler. Adding the veggies adds a sweetness that is surprisingly good!

Chili-Lime Chicken Kabobs

Instead of making kabobs, I used the marinade for grilled chicken breasts. The flavor was great, and the chicken was moist! I did add a tablespoon of honey, and omitted the cayenne b/c I was out of it. Next time I will be sure to use cayenne. My husband and I thought this marinade was flavorful, yet light and refreshing. Perfect for summer grilling!

Buffalo Chicken Dip

This recipe is great...I only gave it four stars because canned chicken is not the way to go. I have always made this with boiled and shredded chicken (one pack of three boneless chicken breasts). No need for a crock pot...everytime I make this it is gone within 20 minutes anyway! I also serve with the scoop tortilla chips instead of crackers - just my preference.

Blueberry Pie

This was my first attempt at making blueberry pie! Everyone loved it! I followed KRPAYNE's suggestions of 5 tablespoons of cornstarch, adding lemon juice, and cooking at a lower temp - it was perfect!
