Grandma's Chicken Noodle Soup

Reviewed: Apr. 28, 2015
Very good base recipe! Added more celery and onion and added carrots and garlic. Sauteed veggies in a little olive oil, then added broth. (low sodium). Did not have poultry seasoning, so used sage, rosemary, thyme, marjoram and a little curry powder, 2 bay leaves, black pepper and some fresh lemon. Used 'No yolk' egg noodles - came out great! Will make again. Would be good with leftover turkey too!

Slow Cooker Cider Applesauce (No Sugar Added)

Reviewed: Apr. 13, 2015
Had a bunch of apples (different varieties) that needed to be used up. Added 1/2 cup water, because it started to stick. Took about 3 1/2 hours on high. Used immersion (stick) blender to blend it all up. I needed to add 2-3 tablespoons of brown sugar after tasting. I think because of the different varieties of apples used - it was a bit tart/sour than it normally would have been. I love that it has NO added sugar and you can adjust accordingly if needed. Super easy and the house smells fab. Will make again!

Party Punch III

Reviewed: Apr. 6, 2015
Fast, Easy, Tasty + makes a lot! Everyone of all ages loved this punch on Easter Sunday. Not a drop left. Froze some cubes of the Hawaiian punch and OJ plus froze some sliced oranges. Looked pretty and kept the punch cold. Use a decent OJ - makes all the difference. Really like that it doesn't have a ton of ingredients and is fast to make. Will make again!

Chef John's Irish Pork Stew

Reviewed: Mar. 16, 2015
Absolutely delicious! The pork had a great flavor and was so tender. Followed recipe - needed to add 1 more cup of broth and threw in some thyme. Used Sam Adams beer. Wicked good with the mashed potatoes on the bottom. Will make again and add in more veggies - the little cabbages were a great addition! Yummy in my tummy!

Pasta e Fagioli a la Chez Ivano

Reviewed: Jan. 7, 2015
YUMMY! Split the recipe and it make a nice BIG pot of soup. So good. Letting it simmer for at least an hour, really brings out the sweetness of the sauce/broth. Added a few carrots - chopped and a handful of frozen corn (just because they needed to be used up. Used low sodium beef broth. Also added a little more broth than called for because the pasta soaks some of it up. Topped with some freshly grated parmesan. Perfect for a cold Minnesota day! Will make again!

Creamy Chicken Gnocchi Soup

Reviewed: Nov. 4, 2014
Oh my - YUM! Made as recipe as stated - except used 1.5 cups of half-n-half and 1.5 cups of fat free milk and added sliced mushrooms. After tasting, added more black pepper, thyme, nutmeg and added some rosemary and grated parmesan cheese. It got pretty thick, so added 1 cup of water to thin it out a bit. Really delicious. Will make again and will also try with leftover holiday turkey!

Caribbean Zucchini Bread

Reviewed: Jul. 13, 2014
Delicious! A nice, new twist on zucchini bread. Like other reviewers, I used 2 cups of whole wheat flour and 1 cup of white flour. Reduced the sugar to 1/2 cup each of white and brown. Did not have applesauce on hand, so used yogurt - worked fine. Next time, I might throw in a handful of chocolate chips or some drained crushed pineapple. Flavors blended better when tasted the next day. Makes 2 nice, big loaves. Thanks!

Yum! Served this at a 4th of July picnic and everyone loved them. No one could believe that there was a can of black beans in the mix. Fast & easy to make, too! Used low sodium black beans and blended in the Nutribullet. Worked great! Will make again and again.

Mexican Bean and Rice Salad

Reviewed: May 7, 2014
Surprisingly YUM! Used red pepper instead of green, green onion for the white onion. And, added a little olive oil and red wine vinegar. Did not have jalapeños, so added a few drops of smoked chipolte tabasco. Makes a TON. PS: Also, to make it even quicker to put together, used Trader Joe's frozen brown rice - just heat, cool and mix it all together. Will make this again and again!

Vegetarian Chickpea Sandwich Filling

Reviewed: Mar. 19, 2014
Wow - what a great surprise! Fast & easy to make with ingredients on hand. Used a potato masher to mash up the beans. Super fast. Added mayo, chopped celery, dijon mustard, dill weed, dill relish and a hard boiled egg (just the white) - skipped the onion. Basically made it the same way as tuna or egg salad. Super yummy. Will make this again and again. Thanks for sharing.

Chili Casserole

Pretty good! Per other reviewers, changed this up a bit. Added some taco seasoning, used 1/2 cup taco sauce instead of 1/4 cup, used frozen corn and added some chopped red pepper. Used the 'no yolk' egg noodles. Fast and easy to put together, especially with pre-cooked ground hamburger. Family friendly.
