Caribbean Zucchini Bread

Delicious! A nice, new twist on zucchini bread. Like other reviewers, I used 2 cups of whole wheat flour and 1 cup of white flour. Reduced the sugar to 1/2 cup each of white and brown. Did not have applesauce on hand, so used yogurt - worked fine. Next time, I might throw in a handful of chocolate chips or some drained crushed pineapple. Flavors blended better when tasted the next day. Makes 2 nice, big loaves. Thanks!

Brownie Mix-Black Bean Brownies

Yum! Served this at a 4th of July picnic and everyone loved them. No one could believe that there was a can of black beans in the mix. Fast & easy to make, too! Used low sodium black beans and blended in the Nutribullet. Worked great! Will make again and again.

Chicken, Asparagus, and Mushroom Skillet

Really liked this 1 skillet dish! Like others, increased the lemon/wine to 3 Tbls each. Added a 1/2 chopped onion. Will make again!

Mexican Bean and Rice Salad

Surprisingly YUM! Used red pepper instead of green, green onion for the white onion. And, added a little olive oil and red wine vinegar. Did not have jalapeños, so added a few drops of smoked chipolte tabasco. Makes a TON. PS: Also, to make it even quicker to put together, used Trader Joe's frozen brown rice - just heat, cool and mix it all together. Will make this again and again!

Sesame Udon Noodles

Turned out really good. You can add or subtract to whatever your families taste! Used organic Udon noodles precooked purchased at Costco - fast and easy and healthy!

Garbanzo Bean and Sausage Stew

Yum! This was tasty! Used polish sausage and 1 can of garbanzo beans (drained & rinsed). Did need to add additional chicken stock (maybe 1-2 cups more). Will make again. Delicious!

Vegetarian Chickpea Sandwich Filling

Wow - what a great surprise! Fast & easy to make with ingredients on hand. Used a potato masher to mash up the beans. Super fast. Added mayo, chopped celery, dijon mustard, dill weed, dill relish and a hard boiled egg (just the white) - skipped the onion. Basically made it the same way as tuna or egg salad. Super yummy. Will make this again and again. Thanks for sharing.

Spiced Butternut Squash Soup

Yum! Love the flavors! HINT: Costco has organic cubed butternut squash already to go. Added a couple of carrots. Used 8 cups of low sodium broth. Doubled the spices to 1/4 tsp except the cayenne. Used 1/2 cup half-n-half and a 1/3 cup of cooking sherry. Delicious! Will make again!

Chili Casserole

Pretty good! Per other reviewers, changed this up a bit. Added some taco seasoning, used 1/2 cup taco sauce instead of 1/4 cup, used frozen corn and added some chopped red pepper. Used the 'no yolk' egg noodles. Fast and easy to put together, especially with pre-cooked ground hamburger. Family friendly.

Toscana Soup

Really good. Fast & pretty easy too! Used 4 cups of low sodium chicken broth and 2 cups water. Microwaved the potatoes for 2 minutes to soften up a little. This came together quickly. Like other reviews, this needs some additional spice - we added red pepper flakes - next time, would use spicy sausage. Also, upped the half-n-half to 1/2 cup. Will make again.

Slow Cooker Ham and Bean Soup

Very good and makes a nice big batch! Like some of the other reviewers, I added more broth, water and 1 15oz can of diced tomatoes. Ended up using a 1lb bag of 15 bean mix, so eliminated the extra can of beans and threw away the ham packet that came with it. Looked at another recipe and added 1 tablespoon of dried parsley, 1 tsp of chili powder, 1 tablespoon of worsh. and 2 tablespoons of dijon mustard. Came out fabulous with great flavor! Don't forget the ham bone. Sometimes the Honey Baked Ham store sells ham bones…mmmm, mmmm, good!

Slow Cooker Baked Potatoes

This worked perfectly! Had some super large bakers and instead of putting in the oven for hours, put in the slow cooker and they came out great. Just right for the Super Bowl baked potato bar. Will make baked potatoes this way again. Saves space in the oven and would be great way to keep the kitchen a little cooler in the Summer. Great idea!

Perfect Baked Potato

It worked! Had some huge bakers that would have taken just about forever to bake in the oven. Put these in the crockpot for 4 hours and they were perfectly cooked. Made a great baked potato bar for Super Bowl snacking! Will make baked potatoes this way again!

Chocolate Chip Banana Muffins

Yum! Easy to make with ingredients on hand. I used 1/3 cup canola oil and 1/3 cup applesauce - instead of the 2/3 cup oil. Used 3/4 cup chocolate chips, which was plenty for our tastes! Also, turned the temp. down to 375 degrees and baked for 20 minutes. Used toothpick to check for doneness. Will make these again and again. Thanks!

Roasted Chickpeas

These are yummy and so easy to make. 1 can does not make much! Next time will double recipe. I only used about 2 teaspoons of olive oil and a little salt. Baked on convection setting at 375 for about 35 minutes. Then, shut the oven off and left them in while the oven cooled down. Nice and crunchy, but not too crunchy. Family liked them and will make this healthy snack again. Thanks!

Pumpkin Cheesecake Pie with Cranberry Pecan Topping

Made this instead of traditional pumpkin pie. It was a hit! Light and refreshing after a big holiday meal. Great to make this ahead and throw it in the freezer. Take out of freezer about 20 minutes before serving. Slices great and the cranberry nut topping is pretty and tasty!
