Spanish Rice Bake

This turned out delish! Added a rinsed/drained can of black beans and used INSTANT rice - cooked on the stovetop for 10 minutes and then in the oven for 15 minutes - turned out great. Family loved it - will make again!

Honey Baked Chicken II

Yum! Used 2 tablespoons of butter and added 1 teaspoon of garlic powder and 1/8 tsp. cayenne pepper. Turned out fantastic. Family loved it - will be using this again! Make sure you let the chicken get all crispy and sticky...

Low Sugar Strawberry Rhubarb Crunch

Yum! Followed recipe pretty close. Like others, added 2 tablespoons of corn starch to the mix and added 1 more tablespoon of honey. Also added 1 tsp of lemon juice. Lots less sugar than a regular type rhubarb crunch. Easy recipe with ingredients typically on hand. Will be making again and again!

Porcupines

This is a good base recipe. The recipe is bland as written. Add your own spice to make it your own. I added Greek seasoning and a bit of chopped green pepper. I also added another 1/2 cup rice to the tomato sauce mix and 2 teaspoons of brown sugar. Used Instant Rice and had no problem with the crunchies. Family loved it ~ so will be making it again!

Sugared Asparagus

Excellent! The ingredients work! Next time, will cut back on the brown sugar. Added a clove of minced garlic for a sweet & savory twist. Great with Asparagus. UPDATE: Used this same recipe for Baby Bok Choy and it turned out GREAT!

Sarah's Rice Pilaf

Yum! Doubled the rice and Orzo. Used instant (Minute) rice and upped the chicken broth to 3 cups. Take the time to brown the Orzo pasta. Added some fresh parsley and grated parmesan at the end. Delicious!! Will be making this again and again!

Greens with Cannellini Beans and Pancetta

Yum! We call this 'beans & greens'. Used spinach and kale. Doubled the greens and doubled the bacon. Prepped the greens and onion earlier in the day, making dinner a snap! Pan fried the bacon till crisp and then used the drippings to sauté onion and greens. Served with country sausage (didn't need too) - Family was really surprised that they liked it! Will make again and again! Thanks for sharing.

Turkey-Cheese Macaroni Bake

A different way to use up left over turkey. This turned out pretty tasty. I did not make the flour/cheese mixture. Instead used 1 can of cheese soup and 2 cups milk. Also added a squirt of prepared mustard and some other spices. Along with the onion, sautéed some garlic, mushrooms and red pepper. Did not have bread crumbs - so used crushed ritz crackers for the topping. Came out great. This is a very good base recipe - you need to add your own personal spice tastes! Will make again.

Roasted Vegetables

Nom-Nom. Easy to make and you can switch out other root vegetables if needed. Threw in some broccoli that needed to be used up. The only caution: This takes longer than 35-40 minutes - probably closer to 1 hour (even with convection). Makes a lot, it is good for you and the fam loved it! So, will make again and again. Thanks for sharing.

Stuffed Celery

Great little spread. Replaced Ranch bottle dressing for the sour cream and pecans for the walnuts. Made it early in the day to allow flavors to blend. Great on veg, crackers or as a sandwich spread!

Black Pepper Beef and Cabbage Stir Fry

Yum! Doubled the recipe - did not use the cornstarch. This is a good base recipe. You do need to ADD some additional seasonings - like ginger, chinese allspice, paprika, etc. Also, don't be afraid to add more cabbage, mushrooms, etc. This turned out great for us and makes a ton. Will make again and again. Thanks for sharing!

Excellent! Lots of chopping - but makes a ton of soup. Loved the red wine addition. Had leftover penne pasta (cooked), so just cut some of those in 1/2 and added! Also, used low sodium chicken broth and tomato sauce. Thanks for sharing.

Blueberry Pumpkin Muffins

Don't let the unexpected mix of ingredients scare you! This works! Only change I made was increased the blueberries to 1 Cup. Made 12 yummy regular size muffins. Fam loved it - will make this again and again.

Quinoa with Feta, Walnuts & Dried Cranberries

Super fast & tasty. Make sure that your Quinoa is rinsed. Most Quinoa sold in North America has already been rinsed. But, if you want to be extra careful - soak the Quinoa for 5 minutes or so in water and drain before cooking! An optional add in: chopped green onion, or parsley.
