Fast and Easy Hamburger Casserole

This recipe has a been a go to favorite for my family for the better part of 20 years. I have read a lot of negative reviews and was really surprised. Over the years of preparing this recipe this is what I do. First, I put the cream cheese in a sauce pan and heat it up . After that I add the cream of mushroom soup, ketchup and the milk. I bring it to a slow boil. In a seperate skillet I add fresh mushrooms, onion, garlic and then saute until barely tender. Once this is done I place the onion mixture into the bottom of the casserole dish and then brown the burger. Once the burger is done I add ALL the ingredients into the skillet and mix throughly. I bake the mixture for 30 min. Once the mixture starts to boil in the oven I then add the biscuits, this is how to get your biscuits to cook on the bottom side. I hope this solves some of the negative posts and benefits first time makers of this dish. The first time I made the dish I served it up and before the plates were cleaned I got up in the middle of dinner and had to make another batch.

OMG, my husband and kids absolutely loved this recipe. I added a couple more slices of bacon, fresh portabella mushrooms and used whole wheat linguine. Easy peasy family pleaser.

Oatmeal Whole Wheat Quick Bread

I doubled the recipe as garnered from the reviews that I read. However, I did make a few changes myself, I used old fashioned oats, 3 TBLS unsweetened applesauce, 1 TBLS cinnamon, 1 TBLS pure vanilla extract, replaced the milk with non dairy coconut milk and a 1/2 cup chopped pecans. As I was mixing the dough I noticed that it was stiff compared to the reviews, but I think that is could be attributed to grinding the oats, as well as the type of oats that I used. I baked it at 350 for 1 hour.

Grandma Grippin's Brown Pudding

Thank you for a trip down memory lane. We found it to be very soupy like but good flavor. I added cool whip on top before serving. I will add vanilla next time and a little cornstarch to the brown sugar and water to thicken it a bit. I LOVED the "down home" simplicity to this recipe. Thank you for the old memories made new.
