Microwavable Chocolate Fudge

Very easy and very quick! But don't expect the taste and texture of real cooked Fudge. For the time it took to make it...... it is adequated.

Supreme Apple Butter

Excellent, I doubled the amount of Cinnamon, and Cloves. Added 2 tesp each of Allspice and Nutmeg. Wonderful. You can easily adjust the spices to your taste. I used a crock pot to prevent sticking and scorching, it worked wonderful and the house smelled terrific! Will keep this recipe.

Caramel Corn III

Excellent!, I did triple the caramel sauce for the amount of popcorn.Had complete coverage of the popcorn. I did not have the problems most of the reviews suggested. Superb taste. Great crunch. Exactly the reciepe I was looking for. Will add to my favorites.

Butter Pecan Bars

These are good. I wanted them to be more chewy. I cut the flour down by a 1/4 cup. Added a cup of pecans. Bake them in a 300 oven for 50 mins, in a 9 x 13 pan. I liked them much better this way. Thinner and more chewy.

Cranberry Chicken I

It was edible, But very bland. Chicken had no flavor, needed salt and/or other spices. The presentation (color) was hard to get around. Sauce was good with the rice but not good enough to make again. After reading all the reviews was really hoping I would like the uniqueness....but No.

Monster Cookies IV

These are AWESOME!!!! Moist and Chewy! Great taste! Mixed everything by directions with my kitchenaide. No problem. : ) But it is a very thick batter. When I added the chips, nuts, etc., I mixed by hand not to crush them. I did not have any wheat flour so just substituted the regular white flour and all was good.(I wish the the color was a little darker after baked.... the wheat flour may do this) I did process !/2 of the oatmeal as one reviews suggest for a variety of texture. For my taste: I added 1/2 cup cho chips, 1/2 cup butterscotch chips, 1/2 cup white cho chips and 1/2 cup raisins. And only used pecans. Also added 1/2 cup coconut as other monster cookies recipes include. The cookies did not run on the baking sheet while baking. Had great texture. A little crunch a little chewy and very moist. I rolled 1 TBSP balls and then flated. I added M & M's on top after they were on the cookie sheet for added color. Baked for 11 minstues at 350. Love love love them.!!!! Yum yum yummie! Enjoy! I will baked these again.

Blue Cheese and Pear Tartlets

Excellent! Will make again, best if served warm. Due to some of the reviews, I did adjust a little. I mixed equal parts cream cheese and blue chesse. I used canned pears and added a small amount of the pear juice to prevent the mxture from being to dry. I did drizzle the top with honey and added a candied pecan for flavor and presentation. Fabulous!!!!

Sam's Famous Carrot Cake

It's really hard to review a 5 star recipe. I just wanted mine to be a bit more spicey and with a little less fat. So I increased the spices to include: 1/2 t each of allspice, nutmeg and cloves. I substituted 1/3 cup butter and 1/2 cup no fat sour cream for the oil. I also used 1cup wheat flour in place of 1 cup white, and 1 cup brown sugar in place of 1 cup white. And left out the pineapple. These just fitted my taste better. Great base recipe as is, Yummy, moist, and DELICS! Maybe next time I'll try without the coconut to have strictly "Carrot Cake"

Cajun Corn and Bacon Maque Choux

OMGoddeness this is awesome!!!!!! My only change was I used fresh corn from the freezer that I had put up in the summer. GREAT, Excellent way to change up corn. Thanks! If you like all these ingredients, this is a must try!!!

Oatmeal Raisin Cookies IV

Good base recipe. Mixed the ingredients as directed. My modificaations were due to reading other reviews and my taste. Soaking the raisins is a MUST! Next I used 1 cup oat flour, 1 cup wheat flour, and 1/2 cup white flour(just healthier). Also changed to 1/2 tsp of soda, 1/2 tsp baking powder and 2 tsp salt(to help rise). To the flour mixture I used 2 Tbsp cinnamon and 1/2 tbsp of cloves(for more flavor). To the creamed butter I added 1 Tbsp of Vanilla, 2 Tbsp of Maple syrup and 1 egg. I ommitted the nuts and increased the raisins to 2 cups. Baked 12 minutes at 325. Let them cool for 2 min on the cookies sheet, them move them to a cooling rack to cool completely. They will crumble while hot, but pretty presentaton when completely cool. Without the extra spice, these would be pretty bland, I think. But you can decided. But they ended up most and chewy, just what I was looking for. I gave it 3 stars, but with my changes, it gets 41/2. Yum.... enjoy

Delicious Ham and Potato Soup

Really really Good! Will makes this again. Loved the pepper kick. I used country ham, and ommittted the salt. Very tasty. Also added chopped carrots, mainly for color, but like the taste as well. Super recipe.

Cashew Avocado Chicken Salad

Wow, yummy Yummy YUMMY! A great combinatons of flavors. A new twist on Chicken salad. So different, so wonderful. I used Mayo instead of Ranch and Honey Roasted cashews instead of plain (loved the sweet taste it added). I also added the bacon into the chicken mixture. The changes were to my perference. Will make for a luncheon, it is that special, and the presentation is very appealing. .

Chewy Coconut Bars

It is ok. Not real chewy, more like a cookie. The chocolate doesn't add much. Would only make again with modicatons.....more coconut, less chocolate, and shorter bake time.

Chewy Coconut Cookies

Great cookie! Loved them. Will make again. Exactly what I was looking for today. Def for the coconut lover. Moist inside crisp outside. Had no problem with recipe. I did add 1 cup toasted coconut to the 1 1/3 cup already added. This Added a little crunch and more texture. Also doubled the Vanilla.
