Portobello Penne Pasta Casserole

This was fantastic! I veganized, using soy milk and cheese and bragg's instead of soy sauce. I ended up using all the cheese in the sauce and sprinkling some diced tomatoes on top. The cheese sauce is great, but I will experiment next time with different spices and possibly wine for some added depth.

White Bean Chicken Chili

Really hearty and lots of flavor! I made a double batch for my daughter's birthday party and everyone loved it. Served with sides of sweet cornbread, salad, and grilled cheese. Made in the crockpot and subbed green salsa for tomatillos. I only used one can of chicken broth (for the double batch), and chili was still runny so I thickened it up with cornstarch and water. Thanks for the recipe - it was exactly what I wanted!!!

Green Salad with Cranberry Vinaigrette

Review of dressing only... Great dressing! It does taste extremely tart on its own, but tones down a lot when paired with the right salad. No additional sugar necessary! I made a baby green salad with gorgonzola, craisins, walnuts, red onion, and chicken. On a side note, this does thicken considerably in the fridge - use within a few hours of making, or add some water to thin.

Apple Crisp III

Wow, this is good! I made a "test" batch for 2, following the directions but using a little less water and pumpkin pie spice instead of cinnamon. The consistency was perfect, and the taste unbeatable! I will be making a double batch for my dinner party this week!

Chicken Puffs

These were great! I sauteed half a large onion and 3-4 heaping Tbsp garlic in a little olive oil and added whole chicken breasts with a little salt and pepper. Shredded chicken and mixed with an entire packet of cream cheese, no butter. The first time I attempted to use the croissant dough, I had a hard time seaming it all together and ended up with large hot pockets. The next time, I used the individual triangles and brought the 3 corners up together - much easier to manage. I can't wait to make these for Bunco night this weekend!

Better Than Sex Cake II

I've had this recipe sitting around for years and finally tried it. Well worth the wait! I brought it to a family party, where it was devoured. I sprinkle choc chips on top halfway through baking for some extra melty goodness, and use a wooden spoon to poke holes in the cake after removing from oven. Pounr condensed milk on top, let it soak in , then pour caramel sauce (I use the entire bottle). Sinfully delicious!

Banana Crumb Muffins

Exactly what I was looking for! Added vanilla and cinnamon to the batter, but otherwise made no major changes. Very moist, and the crumb topping gives them an extra-special quality. Will be (reluctantly) sharing these with new neighbors :)

Best Spanish Rice

Tastes great! This only takes a few minutes more than making out of a package, but tastes so much better. Used 1c rice and 2c broth, and it still made a ton of rice!

Gumbo Style Chicken Creole

Fantastic! I added another can of Rotel, kielbasa, chicken broth, and substituted cayenne pepper for hot sauce. I loved the heat, but it was a bit much for my husband - next time I will probably use one can of rotel and one of plain diced toms and leave out the cayenne.

Bolognese Sauce

Awesome! I followed the recipe pretty closely, using one 6oz can of tomato paste and 15oz can of tomato sauce. Also used Pinot Grigio, which made the sauce very sweet - might try a red next time. My husband loved it 2 days in a row, and I even served leftovers to my parents, who raved as well. Excellent sauce!

Chicken with Asparagus and Roasted Red Peppers

I thought this was great, my husband just rated it average (hence the 4 stars). I followed the recipe with a few minor changes: diced chicken prior to cooking and seasoned with a Garlic and Wine spice (from the Melting Pot) instead of S&P, doubled the broth, added a little cornstarch dissolved in cold water to thicken the sauce. The vinegar added a nice tang, and overall I think the flavors worked very well together.

Artichoke Chicken

I have been making this for about 2 years and it turns out great every time! I pound out the chicken breasts, which reduces the cooking time to less than 30 minutes. While not the prettiest dish, the flavor more than makes up for it! Perfect for company, or a great anytime dish.

Garlic Parmesan Chicken

Good flavor, but SO MUCH breading! I cut it in half to begin with and still have a ton leftover. Guess I will have to make it again! Good occasional dish, but won't be adding it into the regular rotation.

Crustless Spinach Quiche

Served these for Easter Brunch and they weren't the hit I had hoped. Not a bad flavor, but I think the muenster was a little on the strong side, and also made them a bit oily. Next time, will use a different type of cheese.

Slow-Cooker Pepper Steak

I really wanted to love this recipe, but it just wasn't very flavorful. I followed the recipe, doubling the sauce as some reviewers suggested, and it smelled fantastic all day. The final product (served over rice) just didn't taste like much of anything. Not bad, just nothing special.

Taco Bake I

Quick and easy, although I made a few modifications. I always cook my ground beef with the taco seasoning - so the meat ends up a little more flavorful - and add a chopped onion and can of green chiles. I layer the beans on the bottom, followed by Spanish rice, meat, salsa then cheese. Top with sour cream and serve with chips for dipping. Tastes great!

Sweet Corn Cake

I served this for my Cinco de Mayo Fiesta and everyone raved! My husband said, "This tastes exactly like what you get at a Tex-Mex restaurant!" and probably a bigger compliment, BOTH my picky preschoolers gobbled it up :)

Easy Indian Butter Chicken

The flavor of this was great! My husband put it at the top of his list. The reason I didn't give it 5 stars is that I couldn't get the sauce to thicken at all, even though I followed the recipe exactly. Next time I will try cutting down on the cream, as some suggested. If I can figure out the sauce, this will be out of this world! Updated: this dish has become a staple in our house! I use one stick of butter and just a couple glugs of half and half. I can't believe I ever rated it less than 5!

Tomato Chicken Parmesan

This was quick, easy, and delicious! I didn't like the sauce I used, but that was my fault... I modified the recipe slightly: used 1 egg for 2 large pounded-out chicken breasts, equal parts parm and breadcrumbs, and shredded mozz. Fantastic!

Baked Scallops

Delicious dish! I sauteed fresh onion and garlic in butter first, per other reviewers' advice. I forgot the parsley (would have used fresh instead of flakes) but otherwise stuck to the recipe for the dry ingredients. Phenomenal flavor, will definitely serve again and again!!!
