Easy Garlic Broiled Chicken

This was yummy. I used skinless thighless (they were not boneless) and made the sauce as stated, but I baked them at 370, turning and basting every 10 minutes for about 40 minutes, then I put them under the broiler for about 10 minutes to get them brown and crispy.

Baked Penne with Italian Sausage

This was very good and very simple. I didnt use the cheese because my hubby cant eat cheese, but the kids ate it, and I ate it for dinner, I think 3 days straight. I usually omit wine just because I never have it on hand, but this time had some. I could have probably done just fine without it, but the wine did give the food a nice little flavor.

Shrimp Stir-Fry

I had some shrimp to use and was in the mood for stir fry, so I came across this and was sold. The only changes I made were for personal preference...threw in some zuchinni, used green instead of red peppers and I did make extra sauce because 1) I marinated the shrimp in for about 30 minutes and 2) I just love extra sauce. Gettin hungry just thinking about it...Thanks!

Bacon Wrapped Smokies

I made these for a football playoff party (GO GIANTS) and they were gone by the third quarter. My 3 year old ate about 5 himself. Yes, they were messy and to prepare, but it was well worth it. I sprinkled some of the brown sugar on the bacon before wrapping them and I also sprinkled them again before I put them in the over. I used both turkey and center cut regular bacon. I did have to secure the turkey bacon ones with a toothpick because the bacon kept easily unraveling or tearing. I do recommend lining your pan with foil as it is a mess to clean up (some drippings got out somehow and made a MESS in the over).

Catherine's Spicy Chicken Soup

This soup is great on the first day straight out the pot, but its absolutley delicious on the second and third! I cut the recipe in half because I just wanted to get an idea of how it would taste, but I shouldnt have because now Im mad its all gone. The only thing I did different than the recipe was taking out the can of whole tomotoes, the one can of diced and the tomoatoes from the salsa were plenty for me.
