Tangy Poppy Seed Fruit Salad

A fruit salad is only as good as its parts...I'm giving this recipe three stars because I was not terribly impressed with the results of using canned pineapple. I found it produced a somewhat bland, watery sauce. That said, I like the idea of the recipe and will DEFINITELY make it again using fresh pineapple instead. The combination of citrus and honey is a delicious enhancement to fresh fruit without being overbearing. I have no doubt that using ll fresh fruit will make this a five-star fruit salad. Thanks for the recipe!

Oat Applesauce Muffins

Perfecto! I made this recipe using plain yogurt instead of buttermilk, and I added a dash of cinnamon and nutmeg. The muffins were wonderfully soft and slightly chewy with a mild sweet flavor. People who like cakey, sugary muffins may be disappointed with this recipe, but I loved it, as I prefer a slightly dense and slightly sweet "tea cake" with my coffee. I would eat these muffins for breakfast or dessert. Verdict? Healthy, tasty, quick to make, and filling--who could ask for more from a humble muffin?

Refreshing and healthy to boot! Use natural yogurt (no thickeners or stabilizers) for best results. I did not use nearly as much sugar as the recipe called for, as my mangoes were very ripe. You must enjoy the flavor of yogurt to appreciate this drink. Thanks for the recipe!

Marinated Greek Chicken Kabobs

This recipe was not a success for me. The chicken was very bland. The meat did come out nice and moist, though. This could be an appealing dish for people who do not like spicy food, but it just wasn't for me. I won't be making it again.

Oven-Roasted Sweet Potato Fries

I used a combination of white and sweet potatoes to please everyone at the table, and we loved the spice blend on both kinds. My potatoes did not get crispy, but I suspect the problem is that my oven did not get hot enough. I loved the zesty flavor, and the recipe was a snap to throw together. I have leftover sweet potatoes in the fridge and will be baking a fresh batch tomorrow. Verdict? A healthy, tasty, easily prepared recipe. (The spice blend would make great home fries, too.)

Apricot Lentil Soup

Yes! This is a simple, hearty, flavorful soup that's healthy and a snap to throw together. I did not puree the soup, which didn't matter since it was already creamy from simmering. I chopped the apricots before adding them, and I used two large tomatoes instead of the Romas called for. That was a mistake, as the Romas would have had a better flavor. Next time -- and there _will_ be a next time -- I'll probably add a can of chopped tomatoes as so many have suggested here. Thanks for the recipe!
