Cajun Cake

So good! My boyfriend and I are still working on this cake two days later and each bite is better! For the topping, next time I'll use all brown sugar (I used half white, half brown this time) and less coconut. As other reviewers recommended, I added pecans to the cake batter and it's delicious! My cake did take a little longer to cook through in the center than I expected. It was in the oven about 40-45 minutes, but the wait was worth it! Thank you for a great recipe!

Beef Samosas

I just love these! I omitted the chile peppers but I think it would be great with them. I swapped won-ton wrappers for the phyllo and tried them baked and fried. Frying was definitely better! These freeze well, too. I froze the filling and the wrappers seperately before I cooked them. I ate the remainder of my second batch last week... and they had been frozen for over a month. YUM. Thanks for this great recipe!

Cinnamon Rolls II

These weren't very good at all. Like a previous reviewer noted, they taste more like biscuits with a little sugar. Also, they ended up really hard shortly after cooling. We were really disappointed. Thanks anyway, though.

Asparagus Casserole

This was great! It's definitely a rich dish. I used 3 cans cut asparagus and only one can of salad shrimp. I didn't have any French fried onions so I used crushed potato chips. YUM! Thanks for a new Easter fav!

Wonderful Short Ribs

We just loved this! We don't eat a lot of red meat and we definitely don't do ribs often, but this may be added to our list of regular meals. The sauce was so good! I used a red onion and 1 clove garlic which I sauteed with red pepper flakes. I seared my ribs and deglazed the pan with 1 cup red wine. Instead of a 28 oz can tomato sauce, I used 1 15-oz sauce and 1 14.5-oz diced italian tomatoes. I used cornstarch to thicken. With those changes, this is a 5 star meal! The meat was falling off of the bone (literally!) in two hours. I served over penne. YUM! Thanks so much for a great recipe!

Maria's Pepper Steak

My family loved this. Every last bit of it was gone in 10 minutes flat. I served it with white rice though no one in our house likes it much, and they were fighting over THAT in an effort to soak up all the sauce! Next time I'll definitely increase the sauce ingredients to 1/2 c. each. One of my boys doesn't like what he calls "sweet" meat at all, but even he devoured it. I used 1 green and 1 red pepper and 3 cloves garlic. I cooked the meat seperate from the sauce. Next time I'll just use stir-fry meat, I think. I also used cornstarch to thicken up my sauce. Thanks for an easy and tasty recipe!

Crazy Crust Pizza Dough

So much fun! I made three crusts with this recipe and made each a different way. The first I pretty much followed the recipe, except I added about a 1/2 c. extra flour and tossed some basil in. The second I only used one egg, a dash of garlic powder, 2 tsp. italian seasoning and a drizzle of olive oil. For the third, I tried to cut the recipe in half but didn't use exact measurements and kept playing with it until I achieved the same texture as the first two. These bubble up a LOT when you pre bake them, but it doesn't change how good your pizzas can turn out! The only downside is that I just couldn't get the crust crispy enough. They were a bit chewy. Everyone in our home agreed that we won't be ordering out for pizza again. Thank you!

Apple Enchiladas

This was unbelievable! I made this with my fruit salsa recipe which includes apples, kiwi, bananas and strawberries and it was one of the best deserts I have ever made or eaten! Just delicious! I made the sauce with 1/2 c. butter, 1/4 c. white sugar, 1/2 c. brown sugar and 1/4 c. water and it came out perfect! I'd love to try this with different fillings as well. Thank you so much for a new family favorite!

Oh my! This was sooo good! My brother-in-law came in from playing across the street while I was making this and said it smelled "incredible". I found this extremely easy to make when the ends are kept together with toothpicks. Thanks for the recipe!

Lemon Garlic Tilapia

I would give this only 2 stars, but my boyfriend loved it so much he ate two servings the night I made it and another the next day. I thought it was just... blah. I love lemon and garlic, so I thought adding a little more of each would help with a bit of red pepper flakes but it just wasn't right for me. I don't think I'll be making this again. Thank you for the recipe, though.

Chinese Chicken Fried Rice II

This is so much better than fried rice I get in my area! I doubt I'll ever order it again! The only differences I made were adding a little green onion and cooking the egg just a couple minutes longer. Thank you for sharing!

No Bake Cookies III

Everyone just loves these! I've made them in the past, but I don't think I had the same recipe. I add another heaping tablespoon of peanut butter because we are all pb addicts! The whole house agrees that we should try this with crunchy peanut butter too. Thanks!

Chicken Andouille Gumbo

This was just too good! I made a few changes, but the original recipe is such a great place to start. Like others, I could not get my okra any way but slimy, so I just threw it out. I really like okra, though, so I may have to learn how to cook it! The roux took me about 20 minutes to get to the perfect color (it really makes a difference). I used 2 lbs chicken thighs, chopped; 2 links (about 1/2 lb) Italian sausage, chopped; and 1 lb smoked beef sausage, chopped. I didn't like the beef sausage but everyone else in the house did so I may add more Italian next time. I think this may have been even better with shrimp or crab, so I will definitely try that! I used 4 cups reduced-sodium chicken broth instead of boiling my chicken; 2 14-oz cans italian diced tomatoes (with a little extra italian seasoning); 4 large cloves garlic; 2 small green bell peppers, diced; and 1 med onion, diced. I omitted the celery and file powder. I think the addition of a little extra meat next time will mean a little extra broth (maybe 1/2 cup) because it was so thick without the okra or file! I think this was absolutely delicious served over white rice with cornbread! I also took other reviewer's advice and added whole eggs near the end to hard-boil. This was unbelievably good! This wasn't nearly as spicy as I had anticipated... which made it perfect for my picky eaters and I just added a little extra red pepper to mine for the perfect heat! Thank you for the recipe!
