Eggplant Parmesan II

This was really easy and super good. My first time cooking with eggplant and first time making parmesan anything! Thanks so much for the recipe! Only adjustment to make next time would be cooking time, 35 min seemed like a long time @ 350, my cheese was a little too crispy, but still really delish!

Pumpkin Roll II

I've been making this roll for the last 3 years and people die for it every single year! I looooove it. This year I made it for my office and my neighbors and it is always a huge hit and people always ask for the recipe. I'm not a huge fan of nuts so I just leave that out - doesn't make any difference and the only other change I make is in the cream cheese filling I use 4 tbs of butter instead of 2, it makes it creamier and really takes the roll over th edge. Its pure magic in your mouth! Also, the recipe doesn't indicate this but I always trim the edges off before I package it for a gift - gives a better presentation and recipients can see the swirl.

Sunday Best Fruit Salad

would actually give this recipe 4/12 stars, because I thought the whole can of pie filling would be too much glaze. I originally put about 2/3 of the can in and the salad looked great and tasted great, everything was perfectly coated but then at the end I threw the last third and I realized that my original assumption was correct. it was a bit too much glaze but the recipe is delicious overall, the pineapple juice soak on the apples and bananas is pure genuis. I didn't have kiwi so I threw in halved green grapes and I had some blackberries on hand so I threw in those as well, very very tasty!

Grilled Cilantro Salmon

This was really tasty! I followed the advice of other reviewers and used less honey and more garlic which gave the salmon a perfect taste, not too sweet (that's why the 4 stars instead of 5), but other than that it was really tasty and will definitely use again.
