About this Cook
I am a single mother of a teenage daughter. I love to cook. It is therapy for me. I am always on line finding new ways to cook simple things because I am not confident with new recipes. I love to slice and dice. It gives me a focus and takes me away from the stresses of the outside world.
My favorite things to cook
Mash potatoes. I am really good at changing it up with different spices, cheeses and creams. I think mash potatoes goes with practically anything. It is comfort food for me.

Making sugared walnuts with my mom at Christmas time when I was a kid.
My cooking triumphs
Mash potatoes and a great BBQ bean recipe in the crock pot.
My cooking tragedies
Ham at Christmas time just this past year. So dried out. Good ham, bad cook. How can you mess up ham that you just have to heat in the oven? Need to find an exact recipe to bake a ham.

Delicious Pumpkin Bread
The pumpkin bread batter was enough for 1 large loaf pan and 1 8 x 8 square pan. Just kept checking until the batter no longer clung to the tooth pick. So moist and so tasting like Autumn.

Country Breakfast Casserole
This recipe was very good and easy to make. I added tater tots instead of bread cubes. You can also get creative and use a variety of cheeses and veggies.

Jalapeno Cornbread
I used canned corn. Too watery. Need to use fresh corn on the cob. Needed to add more flour to the mixture to make up for the water in the canned corn. But, other wise good recipe. Used more Jelepenos. Maybe next tiem add cheese.
