Spinach Pie I

I used colby-jack cheese and lightly sauteed the onion and garlic. I did not scald the milk. This pie was delicious and easy. Will make this again! A frozen deep-dish pie crust and ready-cooked bacon crumbles would be great time savers. Let it cool for a few minutes before serving.

Vegan Pancakes

Perfect as written! The second time we made these we added blueberries. The third time we made them we used half all-purpose flour and half oat flour and added a few chopped pecans. Great each time.

Vegan Bean Taco Filling

Very good! I did not need the cornmeal to thicken this, but I added a little frozen corn for flavor. I adjusted the seasonings for my wimpy family. We made tacos with this bean filling, sauteed red and green sliced peppers and sauteed pnions. At the table we added fresh chopped onions, avocado,extra salsa and fresh shredded cabbage. Yummy!

Kathy's Southern Corn Pudding

Very good! I followed the recipe exactly. The flavor was outstanding. The texture was a little unusual, with a watery liquid at the bottom of the casserole. DMIL loved the texture. DH and DD were not so ethusiastic. I will try this again, replacing the milk with evaporated milk or half and half.

Cranberry Sauce Extraordinaire

Delicious! We all loved this Cranberry dish. DH was scooping this up with dinner rolls after the meal. I added the zest of the orange after the sauce was cooked. I toasted the pecans and added them about 20 minutes before serving. Otherwise I followed the recipe. This is a new favorite! Thank you!!

Vegan Chocolate Cake

This cake is delicious, especially for a vegan recipe. It gets five stars because it is very good and vegan. There are other cake recipes I like better, but they are not vegan. The second time I made this recipe I added an extra 1/4 cup cocoa, about 1/2 cup chocolate chips and 1/2 cup chopped walnuts. We like this much better.

Turkey Brine

Superb! I followed the recipe exactly the first time. The turkey was delicious and very moist! Modifications we have tried: ---Add 1 tablespoon juniper berries. ---Add zest from one orange, 1/2 cup dried cranberries and 1 teaspoon juniper berries. ---Use chicken broth and double the rosemary, and add lemon zest. ----Add 1 teaspoon dried lavendar. ----Add 2 teaspoons garlic powder, 1 teaspoon peppercorns and zest from one lemon. Each of these combinations was wonderful. The amount of salt and water seems to be perfect to push the moisture and flavors into the meat. I have used this brine for turkey, chicken and pork, and have found it to be easy and delicious each time.

Stuffed Leg of Lamb with Balsamic-Fig-Basil Sauce

Divine! I served this for Easter Sunday dinner. I prepared each set of ingredients Saturday and set them aside for easy prep on Sunday. It took some time to chop and measure all the ingredients, but it is worth it!!! My family wanted to rate this as a 10, even though they know the highest rating is 5. I will try this recipe with pork and possibly chicken, since we cannot afford leg of lamb very often.

Mushroom Pork Chops

Delicious and easy! We like the gravy so well we double the ingredients (except the meat) so we have plenty. Good good over rice, potatoes, noodles or biscuits. We made the gravy with hamburger patties and call it "Grandpa Steak!

Cashew Raisin Rice Pilaf

Delicious! I have made this dish many times. I served it at a ladies luncheon and had so many compliments. For Christmas I used almonds and dried cranberries instead of cashews and raisins. Easy and healthy.

Quick and Easy Grilled Potatoes

We love these potatoes. I usually slice the potatoes in four - six slices, rather than just in half. We like the toasty grilled flavor on both sides of the potato. We serve with a variety of toppings or plain depending on the rest of the meal. Yummy!

Praline Sundae Topping

This sauce was very delicious. I made some without nuts and some with nuts to serve at a sundae party. It was a big hit. Warning: Be sure not to add the milk until after the other ingredients are cooked. I added the milk too soon for one batch, and the sauce curdled. It still tasted great, but had a funny texture.

Rhubarb Strawberry Crunch

This is wonderful. We liked it even better the second day, warmed just slightly in the microwave. The flavors had mellowed a bit. We also tried this with blueberries one time. Another time we used raspberries and added chopped walnuts to the topping. Good with a little ice cream or whipped cream. This is a favorite!
