Sauteed Swiss Chard with Parmesan Cheese

Our first time having chard. I used red chard...loved it! The rest of the family is so-so about it, but I'll keep making it.

Applesauce Raisin Bread

Very, very good! I didn't have quick-cooking oats, but it still turned out nicely. I disagree with turning it out of the pan immediately...it fell apart, and in my experience, that happens when you turn it out too soon. Next time, I'll let it sit for ten minutes before turning. It is lightweight and flavorful. If you're finding your quick breads to be dense, it's likely you're overstirring. When you combine the wet & dry ingredients, stir it gently with a rubber spatula just until it is blended. It should come out great then!

Strawberry Pineapple Bread

This is fabulous! I had very large frozen strawberries, so I thawed them and mashed them before mixing up the recipe. The can of pineapple I had was chunked rather than crushed, so I drained it and mashed those as well. It was so juicy that I left out half of the oil that was called for. I also left out the nuts, because of personal preference. End result - Fabulous! (Next time, I will try replacing the oil with no-sugar-added applesauce, since that seems to work well with most recipes.)

Dressing Patties

I made this for my husband for his office's Thanksgiving pot luck. It went over quite well, and it was very easy to make. The only thing I didn't like about the patties was that there were large chunks of biscuit in them that disrupted the "dressing" flavor. The cornbread crumbles nicely, but biscuits are much denser, and they might benefit from a quick run through the food processor before being mixed in next time.

Cheese Biscuits I

This was pretty easy, but they didn't taste like Red Lobster's. By doubling the cheddar, and halving the garlic, I got results more like the restaurant's. Good biscuits!

Inside Out Ravioli II

I found the directions a little hard to follow. It seems that maybe a step had been left out. My family liked it better with parmesan cheese replacing cheddar in the recipe. We'll definitely have it again!

Anniversary Chicken I

GREAT recipe! I didn't have the exact ingredients called for, but it works great with parmesan cheese (instead of cheddar) and dijon ranch dressing (instead of plain ranch). Yummy! It's now a family favorite!
