Marinated Ranch Broiled Chicken

I ended up buying a whole chicken fryer cut up and I doubled the marinade. We grilled the chicken for 20 minutes on each side and the chicken turned out so moist and juicy. My husband was still talking about the chicken the next day. Easy, fast, delicious... you can't beat that!

Actually Delicious Turkey Burgers

This is the second time I've tried making turkey burgers and this recipe is so much better than the very first recipe I tried years ago. When I thought the patties were done, I realized that they still needed a couple of more minutes, so I threw the lid on the skillet (for fear of drying them out) and they turned out moist. I think this recipe is a great base to start out with. I plan to play around with it by adding a few other ingredients to make this perfect for us!

Maple-Garlic Marinated Pork Tenderloin

This dish is so delcious! The sweetness of the maple syrup is wonderful with pork. I baked the tenderloin in the oven on 375 for about 40 minutes and served it with roasted broccoli and grape tomatoes. Our 2 and 3-year old ate their share without a fight.

World's Best Lasagna

I have made this 3 or 4 times now and it's wonderful! The very first time I made it I followed the directions exactly, but found that it was a little too salty for my taste. Now, instead of using a tablespoon of salt in the meat mixture, I use a teaspoon.

Yummy! This was the first time that everyone in our household ate all of their veggies. We'll be having this again, except next time I may try to use sesame seed oil as others have suggested.

Italian Spaghetti Sauce with Meatballs

I made this for dinner last night and my husband said that it's a keeper. It'll be hard to buy pre-made sauce again, because this sauce was delicious! I plan on making this sauce to use when I make chicken parmesan. I only made 2 adjustments. I used a handful of parmesan in the meatballs because I love it so, and I used my potato masher to mash the tomatoes before I put the meatballs in.

This was very good and the chicken was very moist. The next time I make it, I plan to use less oregano. 1 tablespoon was a little too overpowering for us.

Baby Back Ribs

These were really good! I ended up doing a rub on the ribs along with the BBQ sauce over night. We baked them in the oven for 2 hours and then uncovered them, added more sauce and broiled them. I used Sweet Baby Ray's BBQ Sauce, but it was a little too sweet for our taste. I'm going to have to try and find a BBQ sauce that's spicy. My husband has requested to have these once a week.

Perfect Baked Potato

This is bad to say, but I've NEVER been able to make a good baked potato. They'd usually turn out undercooked, or dried out. This recipe was simple and the results were great.

Restaurant-Style Buffalo Chicken Wings

WOW! These wings were AWESOME! Our usual wing joint has officially lost our business. I plan on adding this to our meal schedule at least once a week! My husband isn't huge on wings, so I plan to try them using chicken tender strips for him. Can't wait to see how that turns out.
