Lemony Shrimp over Brown Rice

I made this last night with white rice. I added some grated lemon peel (after squeezing the lemon, it seems a shame to throw out the rind), chopped onion and some chopped vegies (broccoli, carrots, cauliflower) and some onion powder, along with some salt and pepper. Fabulous! Also, I didn't pay much attention to exact measurements for ingredients. It didn't seem to matter. This appears to be a very forgiving and flexible recipe. We coupled it with a Sauvignon Blanc and it was heaven!

Old-Fashioned Potato Soup

Stovetop Granola

This is the best recipe EVER! I've been making it for several months and I can't make it wrong no matter what I do! It's fabulous. I've switched out the sugar for Xylitol and the honey for agave and it still tastes great. I've added everything you can think of, but my favorites are coconut, chocolate chips and dried cranberries. And pecans! YUM. I'm addicted.

Refried Beans Without the Refry

OMG, these are fabulous! Wish I'd read the reviews about adding less salt though. They are just a tad too salty for my taste, so I'll reduce to 3 1/2 teaspoons as one reviewer suggested. But the flavor!! Heavenly!

Best Brownies

Chantal's New York Cheesecake

This cheesecake is FABULOUS! I lightened it up in the following way and it came out perfect: Used lowfat cream cheese, lowfat Grahams, substituted vanilla soy yogurt for the sour cream and used a 50/50 blend of Xylitol and Splenda in place of the sugar. I also added a couple of teaspoons of lemon jice. You'd never know the difference from teh original

Festive Prune Cake

Like many others, I made this only because I had some leftover prune juice. But now it's in my recipe box. It tastes like a spice cake--not overly sweet but it definitely hits the sweet spot! Like another reviewer, I added mashed bananas instead of the prunes. (I had those leftover in the freezer as well!) Oh yeah--and I left out the nuts because I didn't have any. Otherwise, no changes. Absolutely fabulous!

Amazing Lemon Scones

These are the BEST! I followed the tips of previous reviewers and cut the glaze in half. It was plenty--even for my sweet tooth. I added a tiny bit of lemon extract to the recipe and pulsed the dry ingredients in my food processor (which worked great). These scones are so light! Heavenly!

Spicy Slow Cooker Black Bean Soup

This just didn't do it for us. I cut back on the "hot stuff"--reduced the jalapenos and eliminated the hot sauce and the cayenne. But it was still way too hot. And other than hot, it didn't have much flavor. We ended up tossing this out after a couple of days since no one wanted a second meal of it.
