Grilled Roasted Red Pepper and Ham Sandwich

Uglies

A recipe this versatile & easy that tastes good deserves the 5 stars it's got! I made it three ways so far: as directed; as breakfast treat using sausage, egg and cheese; and my fave so far: cream cheese, sausage and jalapeño. I used crumbled sausage for all three b/c I just like the flavor of it. The breakfast version was just ok. Not as good as I thought it'd be. If you want a real treat, cook the sausage then run a 1/4 jalapeño thru the food processor. Add crumbled sausage so it makes a coarse crumble. Then add that to some cream cheese and mix. Drop that mixture into the pressed cups and sprinkle shredded cheddar on top. It's out of this world and super simple! If you make the breakfast version, I suggest putting cream cheese in with the sausage, egg and cheese or maybe Tabasco or something. It tasted bland, but not bad. The BBQ version is a lot like a sloppy joe, if you like those, you'll love this one! Hope that helps!!! :)

Blueberry Lemon Bread

WOW is the best way to describe it, I think...the sweet and tangy flavors just explode in your mouth. And it's light, but not airy, just line another reviewer said. Beat the butter and sugar well, I used it softened as suggested. To keep blueberries from sinking, I washed them and put in freezer so they'd be super cold going in. I made muffins instead of a loaf, as I have a 4 year old & muffins are an easier "sell." ;) I used confectioners sugar for the frosting, instead of white sugar. Make it, it's easy and DELICIOUS!!!

Original Chex® Party Mix

My MIL didn't have the seasoned salt one time so she substituted Tony Sachre's (?it's a green can) and it was AMAZING. I started making that change a constant when I make it. It can't be beat. Also, I use the big twisted pretzel sticks broken up into smaller pieces, they absorb the flavoring way better than the little pretzels or the thin sticks. ;)

Egg and Sausage Casserole

Recipe as-is only gets 4 stars, but when I tried it a second time using the suggestions in the reviews, it gets 5 stars. Was delicious with the Italian seasoning, and I liked the addition of 1/8 tsp of salt. Cooking the crescent rolls for 7 minutes and going up to 10 eggs made a great improvement. First go wasn't bad, but you'll definitely want to take the suggestions if you want something that you'll eat every bite of. ;)

A Number One Egg Bread

I did the same as others and halved the dough. Made one nice loaf. I had a little problem because I was short an egg, but I just used the whites from the 6 eggs I only needed yolks of and made do. Very good bread but boy did it make a mess of my kitchen! Super sticky and hard to manage during the kneading process. Other than that, though, it was good. My first time to make it. Can't wait to put it in my French toast casserole for the morning!!!

Migas II

Like some of the other reviewers said, it is a great "base" recipe, but personal additions do make the dish. :) I added about 2 tablespoons of chunky salsa & a little leftover queso from a previous meal. And I agree, the cumin is a must. ;) Excellent and so authentic. Reminds me of my days living with a Mexican family, when I spent a summer in Mexico during college. Authentic & delicious! ENJOY!

Refried Beans Without the Refry

My first time doing refried beans that didn't include a can and I was delighted with the finished product. I had enough to serve it with a meal and freeze some for later. The jalapeno made me nervous, but it wasn't too hot at all...just added flavor. THANK YOU! Great recipe!

Elegant Scalloped Potatoes

My, my, my...just make it. Trust me. It's PHENOMENAL! :) The color is excellent, the aroma filling the house is nice and the flavor is outstanding. Cannot say enough good things about this and neither could anyone I made it for. Definitely a meal maker. ;) I'd suggest breaking this out when you have a fairly boring meal and need a side. Sometimes a boring meal can exceed it's potential when a truly delicious side is added. This is definitely a dish for the occassion. ;)

Banana Pudding III

Thanks for making my neighborhood believe I'm a great cook! HA! Made it for my son's birthday as a side dish and everyone just RAVED. There are two cute single guys on my street and both have made a point of telling me that they're up for dinner at my house anytime! YESSSS! (I'm a single mom.) I've made it 5 times, maybe 6, and the sound of the fridge opening, spoons clanking and then the fridge door shutting is enough to convince me that this is the BEST BANANA PUDDING YOU'LL EVER MAKE. PS: Don't leave out the lemon juice and don't substitue it, either! It keeps the bananas from turning brown and the faint zing is just the thing. ;)

Buttery Herb Wine Sauce

My only complaint is that no one warned me I should make a double recipe! We cleaned the pan with a rubber spatula trying to satisfy our appetite for this delicious sauce!!! I can't communicate how tasty this was! Make it tonight, you won't be disappointed! Note: I omitted the egg. No need for the egg, anyway, I can't imagine this tasting any more delectible than it did without it. I served poured over a bed of linguine with chicken breasts.

Cantina Pinto Beans

OH MY GOSH! What a great bean recipe! I took a short-cut and substituted canned beans over the soaking method, as I was short on time and well, let's face it, soaking is a hassle! :) But, they still turned out fantastic! The spices blend together perfectly. We loved it!

Orange Honey Garlic Chicken
