Bread Pudding Apple Pie

This was fun to try. It was good fresh out of the oven. Didn't fair as well after a few days. Will probably make again.

Eggplant Mixed Grill

This was a nice mix. Be sure to go easy on the garlic and allow the full time to cook the veggies. Eggplant is not tasty unless its fully cooked. :) our mistake... :)

Spanish Rice II

This was good. We followed the recipe and it was done a few minutes early. But holy the chilies made it spicy! I think I'd pull out half of the chilies from the tomatoes and lessen the chili powder. Went well with tacos.

Eggs Benedict Breakfast Pizza

Delicious! :) We made it tonight and followed the directions, except for we made our own crust. It turned out fabulous! We used Knorr's Hollandaise Sauce mix. One piece is very filling. Next time we'll play around to add our favorite toppings (mushrooms, sun-dried tomatoes, peppers). Mmmm! Perfect for any time of the day!

Spinach Tomato Tortellini

This was very good. I up'd the spinach and used canned tomatoes. I also doubled the recipe, which was good, because the 6 of us nearly finished it all off! Also, cooked up some chicken separately (cubed, lightly tossed in flour, cooked over Med-high with olive oil) for the meat-eaters to add. It went over very well. I would put in more herbs next time. Thanks for the great recipe! Paired well with salad greens and garlic bread.

Sweet 'N' Sour Tossed Salad

Delicious! I love the subtle sweet/sour flavor over romaine. I prefer this far more than Oriental Coleslaw, but it fits with any Asian meal! I didn't have time to toast the noodles/walnuts, but they went in just fine. I threw in radishes, because I had them on hand. Mmm, it was great! Try this dish with "Grilled Asian Chicken" served over rice - you'll love it!

Grilled Asian Chicken

This was delicious! Followed the recipe, but I ran out of soy sauce and had to substitute 1/2 of it with red wine vinegar. I was nervous, but it tasted wonderful! We marinated it for 20 hours, grilled it beautifully! Served with Taste of Home's "Sweet 'N' Sour Tossed Salad" (this site). Paired great! Next time I'd serve over rice. MMMMmmmmm....

Roast Sticky Chicken-Rotisserie Style

Used 2 (5 lbs) chickens, in separate baking dishes. Done in 4 hours at 260F. And we couldn't get over how moist it was. Yum!

Blueberry Snack Bars

I completely changed this recipe to use what I had on hand, and for that new recipe, I give it 5 stars. Substitutions: white cake mix with almond extract added to batter, cherry pie filling, chopped almonds. Omit coconut. This turned out fabulous! It was very pretty and easy to make. I'd love to try the original recipe when I have ingredients!

Elegant Scalloped Potatoes

This turned out very well! We used Velveeta's Jalapeno cheese and threw in a few sliced jalapenos on the side for the spicy-lovers. I was a bit frustrated with the microwaving, but I think with practice, I'll get better. Just remember to turn and move the potatoes while in the microwave - or they won't cook evenly. The men even got excited about making this one. :D

Blue Cheese Garlic Bread

This is a fun dish to make with the slicing and wrapping, etc. I think the slicing is a bit tricky because you have to get nearly all the way through the bottom crust. If you don't, it's difficult to pull off easily. The taste was unique, but if you like Blue Cheese, you'll probably like this one.

Artichoke and Sun-Dried Tomato Cheesecakes

This was a really neat concept and tasted great! We had problems with the scaling and made 6 of them which were about right for a single, hearty appetizer. Delicious! I'm going to play around with this one to adjust the filling, but I loved how almost everything could be prepped ahead of time! Definitely use sun-dried tomatoes packed in oil.

Pineapple Upside-down Cake Martinis

This is delicious! We'd bump up the vanilla just a touch next time, I think it would completely hide any taste of alcohol... It's dangerous! :D ...On accident, we omitted the vodka and subbed cranberry juice, if you want a nearly alcohol-free drink, it's delicious!

Delicious and so easy! I always thought crepes were difficult and this goes to show anyone can do it. These are amazing! Made it in a large measuring cup - easy to pour. YUM!

Delicious Raisin Nut Banana Bread

4 1/2 stars! This was quite good! I made it as muffins (bake time = 18 minutes) and they were great for breakfast! Very filling and solid, not overly sweet. :) Many went back for seconds. I would recommend cinnamon. I may also try it again and omit raisins but add chocolate chips. Thanks for the great recipe!
