Michael's Foccacia Bread

Delicious! We served it with minestrone soup and I'd love to make this many times over. I'm going to use the leftovers for breakfast sandwiches tomorrow. Can't wait! I found this recipe to be right on, with the exception for the salt sprinkled over top. I reduced it from 1 T. to 1 t. And I think I used closer to 6 c. flour total... Yum! Thanks Michael!

Onion Chicken in Balsamic Sauce

This was ok, nothing special. It really needs something to brighten it, maybe lemon juice and rosemary? I followed the directions and never got the sauce to thicken, so I added butter and dijon. But the sauce still didn't thicken much. In all fairness, I'd doubled the recipe. Even accounting for the extra ingredients, the bake time was way off. With 4 chicken quarters, my bake time was ~45 minutes. We served over rice; noodles would be ok too.

Scrumptious Strawberry Shortcake

This was amazing! It's so much more satisfying than a large cakey piece. A little goes a long way. Yum! We (1) reduced the baking powder and (2) omitted the cream of tartar. Thanks Sal!

Mouse's Macaroni and Cheese

This is cheesy and easy, but too creamy cheesy for our tastes. I would make it again, however, I'd increase it to 3-5 c. of noodles instead. And likely add broccoli or cubed ham to round it out to a meal. Thanks Mouse!

Wow! Thanks Tigerlily402! This was delicious! The orange flavor was pretty distinct and we enjoyed it. But next time, we might just try it plain. I followed the recipe as best I could: I did not have a flan mold, so I used a deep-dish pie pan. And I didn't have a roasting pan, so I improvised with a deep skillet. Not ideal, but it worked! Mmm...

Wonderful! Great for breakfast or snacking. I took the suggestions: (1) Melted butter instead of oil, (2) grated 1 apple, (3) added 1 t. cinnamon, (4) added 1/2 t. nutmeg. And just because (5) added 3/4 c. fresh blueberries and (6) a bit of cinnamon-sugar topping. This turned out wonderful. I bet it'd be delicious without any of my changes, but I adapted it to our tastes. Thank you, Robert!

Best Ever Blueberry Cobbler

This was easy and delicious! I'm usually not big on an orange flavor, but it paired well with blueberries. I followed another reviewer's suggestions: (1) 1/2 t. cinnamon to both berries and batter; (2) increase berries to 5 cups; (3) increase orange juice to 1/2 cup. My final change was (4) grate orange zest into the batter. I thought it gave it a nice complete flavor. The topping is light and cakey. I would not increase the topping, especially if you do not increase the berry filling. ...Unless you want cake with some blueberry at the bottom! Received well by my husband and his family. Serve warm with whipped cream or ice cream. Thank you Jen!

Home Style Macaroni and Cheese

Five Stars when using 1 lb macaroni. We added a bit more cheddar. This was great with broccoli florets and diced ham. Mmm! A touch of chili powder helped round out the flavor. We'll definitely have it again. Thanks VPattison!

Tater Tot Casserole - Ground Turkey & Veggies

4 Stars as is, 5 stars with changes. I added a 16 oz bag of frozen mixed vegetables. We prefer ground turkey and it substituted great. Yum! Oh, and make sure you have plenty of tater tots, it's the best part!

Twice-Baked New Potatoes

Oh my, oh my... Thank you Susan! I eye-balled the measurements and substituted sharp cheddar. Made just about as many as my jelly roll pan could handle. And I'm so glad I did! People loved them. Served as a side dish with balsamic chicken. My husband wanted them for dessert. I'll be making these often and trying the freezing method. Also, I'll try & halve the potatoes prior to baking. Fresh Strawberry Upside Down Cake

Yum! This cake came together so quickly! I refrigerated it for ~4 hours before it was served. The topping was very much like refrigerated strawberry preserves, I wish I'd taken it out to warm for 30 minutes first. Had a few raspberries on hand and tossed them in too! Yum! Great with whipped topping or ice cream. Save a few berries for garnish. Will certainly make again! Thanks parealtor313!

Mexican Bean Salad

This bean salad was delicious! We served it along side Black Bean and Rice Enchiladas. I wish we'd let it sit in the refrigerator longer. We ate it within 1/2 hour of making, but it was even better after 2 days! Thanks Karen!

Black Bean and Rice Enchiladas

These were delicious and very simple. We used enchilada sauce in place of the salsa, but I wish we hadn't. I really like big chunks of tomato, so we will follow the recipe better. Served with Tyler Florence's Mexican Grilled Corn. Thanks Christie!
