Broiled Scallops

Reviewed: May 3, 2008
I liked how quickly scallops cook up and this recipe seemed very basic as it was my first time. I followed the suggestions for sauteing in a skillet and served it over WW pasta with some italian dressing on the noodles. My husband really liked them as well. Will use again, but only as a treat, as scallops were a bit pricey... :) thanks!

Love it! I saw this recipe in an old 1940s Betty Crocker cookbook... A very good classic. :D

Strawberry Bruschetta

Reviewed: May 2, 2008
I think this recipe's a great starting point. I tried some with butter and some with just cream cheese. We actually couldn't really tell a difference between them, maybe its how I did it (slice, spread, broil, fruit, broil). I'm definitely going to play around with this though, because we really liked how light and summery it tasted. Next time I'll try a few different steps. Very fun.

Salsa Chicken

Reviewed: Apr. 29, 2008
I thought this recipe was great for how easy it was. I marinated the chicken in the taco seasoning (Taco Seasoning I) and water and used Rotel tomatoes. I'll definitely do it again for how quick, easy and convenient everything was. Thanks for the recipe! Went great with potatoes and green beans.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Apr. 29, 2008
I really enjoyed this recipe. I used the FF sour cream/skim milk mix substitution for heavy cream. Next time I'll add an extra clove of garlic for more flavor... Thanks!

Quick and Easy Ham with Sweet Potatoes

Reviewed: Apr. 23, 2008
This recipe came together quickly all with ingredients I had on hand. Unfortunately, the overall taste didn't seem enhanced by the combination, it really was like eating the separate items all together. I won't be making it again. Thanks for the recipe though!

Easy Brownie Shortcake Dessert

Reviewed: Apr. 1, 2008
I really enjoyed this dessert, however I omitted quite a bit of sour cream. I used the 1/2 c. in the batter (good), but only a dollop in the whipped cream mixture and even that was plenty. Another friend commented that she would leave it out next time. The fresh fruit on top made it very pretty and it was quick to assemble. Keeper! Also, it serves 8, maybe 12, NOT 16.

Asparagus Parmesan

Reviewed: Apr. 1, 2008
Wonderfully quick and fresh! It cooked up wonderfully in the skillet, used crumbled feta instead and it was great! My husband now likes asparagus (THANK YOU) and I will use this often. I imagine it'd be great with parmesan. One note: It only served 3 for us, because it was gobbled up!

Hash Brown Ham Quiche

Reviewed: Apr. 1, 2008
We had this with some fresh fruit tonight and I really enjoyed it. I liked how the hashbrowns added to the texture & flavor and will try it in other quiche recipes. My husband thought it was very soft, so perhaps the hashbrowns were not crispy enough before the baking? Next time I will add some seasoning, mix the cheese in with the veggies&ham, and pour the eggs over all. Will use again, thanks!

Awesome Egg Salad with a Kick

Reviewed: Mar. 30, 2008
Good recipe, thanks Megan! I liked the touch of bacon, but I'd toss in some celery & carrots next time, too... I left out the horseradish, because I'm a wuss, but I'm sure my husband would have loved that part!

Gnocchi Bake

Reviewed: Mar. 29, 2008
I think this recipe's a great starting place! I had to try it because my husband's such a gnocchi nut... I threw in 1/2 lb italian sausage and a bit more cheese. I'll definitely be making it again!

Peach Cobbler Dump Cake I

Reviewed: Mar. 26, 2008
I used a pastry cutter to blend the butter and the cake mix and tossed some pecans in, too. It's a MUST to double the peaches, I can't imagine not doing it. This recipe is so quick, easy and inexpensive. It's a definite keeper!

Spinach and Potato Frittata

Reviewed: Mar. 16, 2008
This recipe's a great starting point. I like the quickness and healthiness. But I was surprised it never got broiled! I broiled mine after the bottom was cooked. I also added a lot of seasonings and would double that next time! moral of the story: Add Spices!

Andrea's Pasta Fagioli

Reviewed: Mar. 16, 2008
I really enjoyed this recipe and my husband did as well! I had chicken broth on hand, so I substituted it for the water, I cut down on the noodles, but threw in a can of mushrooms. Very tasty! I'm keeping this recipe on hand for the years to come!

Cathy's Banana Bread

Reviewed: Mar. 16, 2008
I think this is a great recipe, I followed DiversWife suggestions and made it in a bundt pan with 1/2 c. of hickory nuts. It baked for 40 minutes and was incredibly moist the next morning. I got a lot of compliments! I'll do it again, next time w/ a t. of cinnamon!

Marshmallow Treats

Reviewed: Mar. 9, 2008
This recipe's pretty good. I felt like there was too much butter, I'd cut it down next time. I threw in ~1 c. of chocolate chips with the rice cereal and it melted right in. Sprinkles went on top for fun!

Bok Bok Popovers

Reviewed: Mar. 3, 2008
I really enjoyed this recipe, although I made a few modifications so I could use it as an appetizer! I used 10 oz of chicken and 5 oz of cream cheese, I also separated the rolls into triangles to make for smaller portions. Everyone loved it though and asked for the recipe, thanks so much!
