Greek Penne and Chicken

3stars as is, 4 stars with changes. Very easy to put together and great flavor combinations. Alterations: Halve the pasta. Use 1 can of diced tomatoes or 3 tomatoes (not nearly enough). And bump up the seasoning (but then I tend to like things with some fun flavors). Oh! the lemon juice is essential! Will definitely make again, Thanks!

Almond Strawberry Salad

Triple Berry Crisp

We reduced the butter to 1c, I can't imagine adding all of it. I will increase the fruit next time (frozen worked well) to 7c. and might even decrease the crisp portion. Very good though! Very good. Thanks!

Chicken with Asparagus and Roasted Red Peppers

This was a good recipe for us. I sliced the chicken breasts and they cooked up much quicker than the recipe indicated. :) I couldn't find roasted red peppers, so I tried a few chipotle peppers in adobo sauce (with the sauce rinsed off). It made it quite spicy and my husband liked it. I will keep looking for roasted red peppers. The asparagus blended nicely with it, too. I might try serving this over rice or noodles next time, too... Thanks!

Raisin Buttermilk Coffee Cake

This recipe's great. I followed it exactly (doubled) and made 2 rather full 9x13's. It baked for ~50 minutes? and went very quickly at work. One taster suggested increasing the raisins, but it could go either way. I'll definitely be making it again. Thanks for the great recipe!

Mostaccioli with Spinach and Feta

I enjoyed this recipe and I think others did as well, but even following many of the suggestions to add flavor, it still needed more. The women seemed to enjoy it much more than our meat-craving men. My husband finished the dish but asked not to have it again. One thing worth noting is that this recipe feeds 5 people. We didn't trust it and doubled it to feed our 6 but it makes much more than we expected. :)

Overnight Coffee Cake

I've been making this one for over a year now and love how easy it is to make ahead of time! I can bake it when I get up and it's still piping hot by the time my coworkers get it. And they LOVE warm treats. :D Thanks so much for this great recipe!

Banana Pancakes I

This was great, followed it as written and it was great. Banana flavor was very evenly incorporated and the batter was a great consistency. Next time might add cinnamon+vanilla. The guys said it was like biting into banana bread. :) Thanks!

Bacon for the Family or a Crowd

Four stars for as written, 5 stars if you follow suggestions. I foil-lined a jelly roll pan, used a cooling rack for one, broiler pan for the other. Both work. Took ~25 minutes for medium-sliced bacon. The 3 men I served were very complimentary about the flavor but lack of grease. Great recipe!

Absolute Best Pancake Syrup

This was wonderful. I'd never made syrup before but it was much more flavorful than store-bought syrup and very fun to make. I used a 4.5Qt saucepan and it handled the foaming fine, and I'm glad I listened to that suggestion. Followed the recipe exactly. :D Thanks so much!

White Ranch Macaroni

I think this is a 4-star, my husband demands 5... He LOVED it. I enjoyed it. There's a lot of flavor in this recipe, even with the asiago cheese taken down to ~2 c. One reviewer suggested increasing the ranch (we used Kraft FF Ranch) but next time I will use less than a full cup. It was very saucy. Maybe I'll use more noodles (Whole wheat!) next time, but it'll need a larger casserole dish. Really liked the crunchy bread crumbs on top, too!

Very good, and easy. I tried this using the oven (~35 min uncovered, 350). I forgot to marinate it and it still tasted great. Probably from the basting. Thanks!

Puff Pastry Salmon

This was fun to assemble. We combined the two sheets and two lumps into one larger "log." It was tasty and got high marks from the 6 of us (my cooking club). Definitely cut down on the spinach and choose your pesto wisely. Most liked the sun-dried tomato pesto, but I'll use lemon pesto next time... Tossed in some feta and it was good! :) Will make again. Thanks!

Broiled Scallops

I liked how quickly scallops cook up and this recipe seemed very basic as it was my first time. I followed the suggestions for sauteing in a skillet and served it over WW pasta with some italian dressing on the noodles. My husband really liked them as well. Will use again, but only as a treat, as scallops were a bit pricey... :) thanks!

Strawberry Bruschetta

I think this recipe's a great starting point. I tried some with butter and some with just cream cheese. We actually couldn't really tell a difference between them, maybe its how I did it (slice, spread, broil, fruit, broil). I'm definitely going to play around with this though, because we really liked how light and summery it tasted. Next time I'll try a few different steps. Very fun.

Salsa Chicken

I thought this recipe was great for how easy it was. I marinated the chicken in the taco seasoning (Taco Seasoning I) and water and used Rotel tomatoes. I'll definitely do it again for how quick, easy and convenient everything was. Thanks for the recipe! Went great with potatoes and green beans.
