Apple Enchilada Dessert

5 stars for easy, 4 for flavor. Simple & fast. Chop an extra apple into the pie filling. Bake for 40 minutes for best flavor. Serve warm with whipped cream or vanilla ice cream.

Pumpkin Waffles with Apple-Cranberry Relish

The waffles and relish were very good. The pumpkin flavor was too mellow for us, but they held together fine. The relish was tasty, but a little more time-consuming than we'd usually do on a weekend. Very pretty though and festive. Grand Marnier and fresh cranberries were substituted for the OJ and dried cranberries. Turned out good. Thanks Amie!

Chicken Noodle Casserole I

Wow! This was delicious! I added 3 stalks of celery & a touch of onion (finely diced) and some frozen peas. To save time, I diced the chicken before poaching it. It was wonderful and went great with a salad. I'm glad I scaled it up, everyone took seconds! Thanks Dawne!

Irish Lamb Stew

This was very good. I WISH I had made it 2 days in advance, as the flavor gets even better. We used beef stew meat because it was cheaper and 6 lbs is a LOT. You can use as little as 3 and be fine. Also, we didn't care for the bacon as the texture was a little distracting. And if it looks like there's not enough liquid, resist the urge to dilute. That was a mistake I made. But it's very good! Great with a hunk of bread.

Nana Dot's Irish Soda Bread

Delicious and easy! We used buttermilk in place of milk&vinegar and it was great. I'll make this a few more times before March 17th! Also, we got 2 loaves out of it, but it definitely wouldn't serve 24 of us. More like 8.

Traditional Indiana Breaded Tenderloin Sandwich

This is definitely a traditional Indiana breaded pork tenderloin sandwich. And it's wonderful! I miss these so much. If you really want it to be authentic, take the time to pound the meat until it's about 1/4" thick. It helps it overhang the bun (like it should). Also, be sure to use mustard and pickles, the rest is optional. Thank you, Kathi!

Blackberry Pie I

Very good, basic, straight-forward pie recipe. I used 5 1/2 cups of frozen berries, thawed. I still wanted to increase it. But it tasted good and was lovely. Thanks Michelle!

E-Z Drop Biscuits

These biscuits were very easy! And the cook time and serving size were right on. But I didn't care for them... They tasted too much of baking powder for us. Maybe lots of herbs or seasonings would help to hide it? Thanks for sharing, Angela.

Confetti Muffins

These muffins were pretty good. We served them with soup and I'd not serve them as a standalone dish. They were moist, but not moist enough to be served alone. I enjoyed the flavor and texture. Slightly crumbly and bits of onion&pepper added to it. Nice colors, too. Definitely enjoyed a savory muffin. Thanks Nancy!

Italian Wedding Soup I

Easy & Delicious! I made a lot of alterations, but I think the base recipe would be fantastic as-is. Thanks Star! (1) Used ground pork. (2) Baked the meatballs at 350 for 20 minutes. (3) Increased the carrots. (4) Used spinach rather than escarole.

Waffles I

A good, basic waffle recipe. I used 2/3 whole wheat flour and will probably do it again. I also beat the egg whites separately, but didn't notice the waffles to be overly fluffy. Just a good recipe. Thanks!

Roasted Spicy Garbanzo Beans

These are really tasty! After baking for 60 minutes and omitting the feta & thyme, we really enjoyed them. They're great to eat as little snacks or on a salad. We can't wait to try them in tacos, too. Thanks!

Grandma's Gingerbread Pancakes

Mmm, delicious! Thanks CKincaid1! The flavor was exactly what we'd hoped for. We reduced the water to 1 c. and I wish we hadn't. They were a little too thick. Excellent with whipped cream, maple syrup, bananas and strawberries. Or by themselves!

Panzanella Salad

AMAZING! Veggiemom, I loved this. THANK YOU! We made the recipe as stated with crusty focaccia bread, grape tomatoes and kalamata olives. It was amazing and great the next day too (though softer). I will make this many more times. Who cares if it's not a "healthy salad?" I love it. Thanks!

Cinnamon Pie

Wow, this was great! First time for cinnamon pie and I loved it! It's amazing how 1 t. of cinnamon can flavor so much pie. Crazy! It really tastes best cooled. Otherwise the texture is can be soupy. I used my 10" fiestaware pie pan and it could have handled another 50%. Next time I'll increase the filling. And there will be a next time! Yum! *Update* My husband said, "This is one of the best pies that I've ever eaten." Keeper!

White Almond Wedding Cake

This cake was delicious and received a lot of compliments! We followed the recipe using a Pillsbury mix and added a package of instant vanilla pudding. We only had a 9"x13" pan and it took ~35 minutes to bake. We loved Heidi's frosting: 3 c. confectionary sugar, 1/3 c. butter, 1 t. vanilla, 1/2 t. almond extract and 2 T. milk. Just delicious & we'll definitely make this again! Thanks cupycakesmurf!
