Spicy Black Bean Empanadas

I used lean steak cut into cubes instead of ground pork and it was delicious. Omitted the red pepper for less spice, but still very flavorful.

Sausage Balls

I add another 1 cup of baking mix and then some red pepper flakes and garlic powder for a little more kick. For a healthier version, try ground turkey breakfast sausage.

Chicken Marsala

Delicious! I added 1/4 t of garlic powder to the breading & sauteed with fresh minced garlic. Before adding the marsala & sherry, I removed about 1/2 of the oil left in the pan to make it less greasy. After letting the sauce simmer for a few minutes, I added 1/4 C of 1/2 & 1/2 to give it a creamy texture. This was wonderful!

Simple Oven Fries

This is much easier & healthier than fried potatoes. I like to play around with different spices and seasonings- Italian, Cajun, or any other combination. I always add garlic powder and paprika to make them brown more evenly.

Chip Chicken Lollipops

Not very impressive- I made with BBQ chips, kind of bland. I wouldn't make it again. Probably fun for kids at a party, though.

Pan-Roasted Steak and Onions

I used a 2 lb. London Broil and doubled the marinade ingredients, but the cooking time worked perfectly. I marinated for 3 hours. I definitely think the longer you can marinade the meat, the better. The onions really make a difference. I used a sweet yellow onion and recommend using the entire thing- it goes great with every bite.
