Sour Milk Spice Cake

reduce sugar to 3/4 cup, reduce oil to maybe 5/6 cup, add 1/2 tsp (scant) nutmeg).... all with a still very delicious, moist cake :)

My roommate made this but left out the banana because we didn't have any on hand. I was ADDICTED. This is probably my new favorite muffin recipe--delightfully unique without being too sweet!

Banana Bread VI

only mediocre, sadly. Especially in comparison to the other banana nut breads out there. Added a teaspoon of vanilla, separated it into two 9 inch cake pans, baked for about 20 or 25 minutes. It was cooked through, but the texture was quite spongy (my main gripe), and the outside looked uncooked. Flavorwise, a little bland. I would sub in some brown sugar, maybe, to spice it up.

Snickerdoodles III

I've made this recipe four or five times now, and every time the cookies are amazingly cute and perfect-looking. I really like the rounded, dome-like shape of the cookies and the way they're just a little fluffy, but I can see how that may be a turnoff for some bakers/tasters. Word of advice though: be very careful with how long you put it in for! The recipe's recommendation of 8-10 minutes is right on, but any longer than that and you will have sad and burned cookies.

Eileen's Spicy Gingerbread Men

TOO flavorful for me... I was looking for something a bit sweeter, a bit more cinnamony, but it certainly lives up to its name! I want to say, though, that even though I worked with small, frozen balls of dough, the dough was still way too sticky for me, so maybe if I had added a lot more flour both my concerns would have been moot.

Pizza Muffins

Delicious! It was a little cheesy for me, but I think that's because I tried halving the recipe and accidentally mismeasured the cheese...so yeah that was my bad. But on another note, I do think it's worth noting that the instructions regarding the incorporation of the buttermilk+eggs and the dry ingredients is a little vague

Banana Nut Muffins

I omitted the lemon zest, replaced the oil that the recipe asked for with 1/3 cup of applesauce, added an extra 1/4 cup of bananas, and also added some extra chopped walnuts, as it seemed like there weren't quite enough. I don't have a standard-sized muffin tin, so I just filled my 24-mini-muffin-tin. The result? Heavenly, and even lower in fat!
