Quinoa and Black Beans

I followed the recipe, but believe the time for the quinoa is off by about 5-10 minutes. Unless you like it undercooked, I would add extra time. I also substituted olive oil for the vegetable oil. It was pretty good, but not a household favorite.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I found this to be the consistency of baby food and a very strange combination of flavors. I think red lentils tend to "mush" more than green or brown. Will not make again.

Addictive Sweet Potato Burritos

I have made these three times already, but have modified the recipe slightly - I placed two sweet and one baking potato in a ziploc bag, closed partially and microwaved to save time. I used black beans and kidney beans because I love black beans and I omitted the soy sauce and added green salsa instead. I didn't bake them at all either. When I wanted to eat them, I just heated up a small portion and put it in a warm tortilla. Yummy!!!

Stuffed Eggplant with Shrimp and Basil

This was my first time eating stuffed eggplant, but it will not be my last. I modified the recipe slighly - using my Ninja, I crushed cashews and added italian seasoning in place of the bread crumbs, I used vegetable broth instead of white wine because that is what I had in the house and I used Vegan cheese to omit the dairy and make it a vegan recipe. Delicious!!!

Amy's Spicy Beans and Rice

Because I love the typical Puerto Rican style of red beans and rice, I used kidney beans instead of black beans and added sofrito in addition to the seasonings suggested. I omitted the cheese to make a vegan version of the dish. It was delicious, but not what I would call spicy. Next time, I will add more heat.

Roasted Red Pepper and Crab Soup

I made this for our first course soup on Christmas dinner. I microwaved the potato to skip the 45 minutes to boil them. I also boiled crab legs in the chicken broth until opaque then removed. Then I added the potato, roasted peppers, seasonings and half and half - then followed this recipe. It ended up being the favorite part of dinner --- everyone asked for the recipe. Some even had 2 or 3 bowls! Thanks for the recipe!
