Brownie Biscotti

The cookie started out promising, but ended as a huge dud. I followed the advice of others and cut the cookies after 15 minutes and turned the oven down to 250° for the second baking. The cookies were still incredibly crumbly when cutting them and even after they were done they still crumbled and fell apart. My husband told me they tasted like "old stale brownies". He said the cookie was too soft to be biscotti. I make lots of biscotti and was looking for something new, but this one will not make the cut again.

Homemade Black Bean Veggie Burgers

My husband and I loved these burgers. I used the suggestions that many of you provided by draining and drying the beans, pushing the liquid from the onions and peppers and the extra egg. I made two changes, I added 1 cup of cooked brown rice to the mixture to give it a little more texture and substance and 2nd - Since I have a gluten free diet, I substituted corn chips (ground in the food processor) in place of the bread crumbs. We are already thinking up some new combinations for this recipe to change it up a little. This is a definite keeper. These burgers are much better than anything you can find in the frozen food section and in most restaurants.

Indian Eggplant - Bhurtha

This recipe is great! I have already made it numerous times and love it as does my family. I grilled the eggplant a couple of times and roasted it too; it comes out great both ways. I double the spices to give it a super kick, the spicier the better.
