Baked Slow Cooker Chicken

I feel like this recipe is unique because it keeps the chicken up, out of the liquid at the bottom of the crock pot to give it a roasted or baked texture. An earlier reviewer said using ramekins works too, instead of foil balls. I've used the same method to dry roast baby spare ribs, using a little dry rub first. Works great. This is a great recipe to use to have deboned meat for other recipes. For some reason, keeping the meat out of the juices seems to give the meat a great texture, not dry or boiled.

Thai Chicken Bites With Dipping Sauce

This recipe is fantastic. I had to make the peanut sauce from a recipe on this site. We eat as a meal with white rice and a veggie. For toppings, try a serving plate with lime wedges, chopped peanuts and cilantro instead of the green onions. Great flavors and an easy cooking technique with better than restaurant results.

Lemon-Lime Chicken Broil

This was too sour for my taste but my 14 year old loved it. Be careful with the hot water in the pan as it can slosh out when basting the chicken. I would add some honey to the sauce if I made it again.

Spring Fruit Trifle

Really nice summer recipe. Make sure to pick up the smaller size puddings - 4 serving size. I thought it was 4 ounces and could not find the right size. People ate it all up at the pool party and it looks pretty too. I used kiwi, blackberries and peaches.

Cheesy Ham Cups

These are great. Very fluffy eggs, like a souffle. I had to make substitutions just because of what I had available and it worked fine. Used Pancetta for the ham and regular onions instead of green onions. I sauted them together. Using a hand mixer, the Greek yogurt and eggs were whipped up nice and airy. Ended up using a quiche dish because it was too large for my 6 section muffin tin. Worked great and sliced up beautifully. Definitely recommend!

Banana Crumb Muffins

Melt in your mouth muffins. These have a cake-like texture. My bananas were almost black but they worked great. Followed the recipe exactly except I accidently made 9 big muffins instead of 10. Also cooked them too long so they were a dark brown on top but they tasted fantastic. The recipe is solid as written. Next time I might add some pecans or walnuts.

Cranberry Pistachio Biscotti

Made these for our New Year's eve party so people could take home little tins of biscotti. Everyone loved them - even the men. Some friends who travel to Rome every year said they were wonderful. Definitely recommend.

Squash Casserole I

Great recipe for all the summer squash. The 1/2 recipe was the perfect size for 2 adults and 2 kids. I mashed the squash in a colander and the consistency was great but the bread crumbs on top stayed too dry. I used the canned bread crumbs - maybe try panko instead next time or mix most of it in with the squash. It's also a bit too sweet for us so I will cut the sugar next time too. But we've already talked about making it again. Thanks for the recipe!

Kettle Corn

This is addictive! It is so easy and cheap to make and we love it. Use the 3 kernal test for your oil and use a little salt. My 11 year old wants it everyday and she thinks it's great that something so tasty comes from 4 wholesome ingredients.

Simple Scones

English Royalty Chocolate Chip Scones

Try the Simple Scones recipe from this web site and substitute mini-choc-chips for the raisins. It's much better and does not require changes to the recipe. To make this one easier, just cut into wedges and bake in a pie shape.

Chicken Fried Chicken

This is an easy and inexpensive recipe. I used chicken tenderloins instead of chicken breasts which reduced the cooking time to about 5 minutes. Just for ease, I used 2 eggs instead of 1 egg. Next time I'll double the dry ingredients too. The kids thought these were the fanciest chicken fingers ever. I'll definitely make this recipe again.
