Irish Soda Bread

ABC Pudding - Avocado, Banana, Chocolate Delight

Yup, this was super good! As others have mentioned, the avocado and banana might need some liquid (milk, water) to loosen it up in the blender. I like that you can leave it as is or add some type of sweetener if the bananas don't give it enough sweetening (sugar, syrup, stevia).

Tourtiere (Meat Pie)

I've made this several times and it is really delicious and pretty simple. I like the spice combination, even though it is different from what's usually used with ground pork & beef. The only thing I change is I leave out the onion and garlic (I can't eat them) and use some celery seed in their place. I definitely recommend this.

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

Wowee this was really good! But don't bother finely chopping the broccoli and cauliflower. That's what an immersion blender is for! I roughed chopped both and after they had simmered in the chicken broth for about 20 minutes I used the immersion blender on them. This was a nice little change from regular broccoli/cauliflower cheese soup. The curry was a nice touch.

Tarragon Mushroom Chicken

This really hit the spot! Easy and tasty and filling - what more can you ask for? I made minor changes - left out the garlic powder and I cooked it in a cast iron soup pot on the stove on low for about 2 hours. Served over orzo and topped with shaved parmesan. Yummy!

Egyptian Lentil Soup

I really enjoyed this soup and it was so easy to make! Only 4 four stars because I couldn't follow the recipe exactly. I can't eat onions or garlic so I had to leave them out, but I added a rib of celery and some celery seed at the beginning and it turned out great. It froze really well too. I will definitely make this again.

White Wine Chicken Soup

This soup was fantastic and pretty easy to make. I can't eat onion or garlic so I substituted 1/3 tsp of medium curry powder. I sauteed the celery and carrots (in olive oil) with fresh poultry herbs before adding everything else and added uncooked cubed chicken once the broth came to a boil. I left out the zucchini, added a turnip, an extra parsnip and used a yam instead of sweet potato. I also used the whole bottle of wine (de-alcholized from the grocery store worked just fine). It was great but be warned, it makes a lot!

Chilled Cucumber Yogurt Soup

I love this soup! It's easy to modify but great as is. I sometimes add celery, avocado and a tablespoon or 2 of ranch dressing. I also like 1/4 teaspoon of chipotle seasoning in it as well. I've made this almost weekly for months so it's safe to say, it's now a 'staple' in my diet!

Blueberry Cream Muffins

This is a really good base recipe. I used whole wheat flour, applesauce instead of oil and half white sugar-half turbinado sugar. They were sweet enough for me and didn't need more sugar. I also added extra blueberries, as others have suggested. Will make these again.

Pistachio Mallow Salad

Whole Wheat Sweet Potato Muffins

These muffins were quite good. Perhaps the potato I used was a bit small because I didn't get a lot of sweet potato flavour from these, but they were very moist and a good breakfast muffin. One small change - I added raisins (I like raisins).

Mushroom, Leek, Chicken Sausage and Tortellini Soup

This was very easy and turned out great! I made a couple of changes - 1 shallot instead of leeks and bratwurst (yes!) instead of chicken sausage (couldn't find any at the store). I used more mushrooms than recommended and cooked them a bit longer, until golden, which really enhanced the broth. As other reviewers have mentioned, add tabasco to your liking. Nice and simple and very tasty!

EAGLE BRAND® Quick Chocolate Mousse

This was super easy and very yummy! Use actual whipping cream (only takes a few minutes to whip) and not CoolWhip or it will be VERY sweet. The whipped cream gave it a very nice mousse texture too. A nice quick chocolate dessert!

Ham Cheddar Biscuits

I made these today and they were great! I took advice from other reviewers and added some butter to the batter and brushed melted butter on top when finished. I also added some pepper and dill to the batter. They were so yummy I ate three right out of the oven! Will definitely make again.

Beef Noodle Soup

Great soup but I made a few modifications. I used meatballs (ground beef, egg, parsley, bread crumbs) instead of stewing beef; added some worcestershire; reduced the water by about a cup and added a can of beef broth, eliminating the bouillon. Super easy and very yummy.

Family-Favorite Soup

This is quite tasty and it's pretty simple to make (definitely a plus for me!). I made this yesterday, and as with most soups, it's even better the next day. I made a few small changes - I used shallots instead of onion and sauted them before adding all the vegetables, and then added half the water. I also used a bit less total water (4 cups) plus 1 small can of beef broth instead of bouillon. I used herbed tomato sauce instead of tomato soup and I also added some worcestershire and some cilantro (I like cilantro) at the end. A yummy hamburger (but not too chili-like) soup.
