Sausage Coddle

I made this for guests for St. Patrick's Day - everyone had seconds and said it was really good. I used Italian sausages as it was all I had on hand, and I think that was the key to the flavor. I know it's not very authentic :) but plain pork sausages would have been too bland as others have said. We also grilled the sausages outside (because the weather was cooperating), and sauteed the onions in the bacon drippings before assembling (as I saw on another version of this recipe). Last tweak - about halfway through baking it looked like the top layer of potatoes was starting to dry out so I spritzed them with olive oil.

Spanish Pork with White Wine

Was looking for a pork tapas recipe, so cut and pounded boneless chops into small cutlets. Sauteed in oil & butter with sliced garlic, simmered in liquid about 25 minutes. Added about a Tbs. of flour to remaining liquid for a delicious gravy. Overall was a bit salty, though I think that may have been me over-seasoning the cutlets in the beginning. Definately will make again!

Campfire Banana Splits

Fantastic and sooo easy! We used marshmallow fluff the first time because we didn't have marshmallows on hand, after using the real thing the second time I would say that the fluff worked better. Good stuff, can't wait 'til we have kids to share this with! :)

Rice on the Grill

I omitted the ketchup (not a fan) and the mushrooms (didn't have any), but did add chopped carrots. I also didn't have a pie pan handy, so just made a foil packet, and it worked fine. Very quick and easy, definately will make this one again! (Next time I think I'll try adding salsa instead of ketchup, to make a "Spanish" version.)

Grandma's Green Bean Casserole

This is a wonderful - and easy - recipe. I needed a recipe from scratch, as one of my guests was allergic to pepper. Followed another users advices - added 1/2 can of french fried onions into the bean mix, then crunched the rest with the crackers for the topping. Made it the night before, and it just had to be thrown in the oven - no leftovers!

Plum Custard Kuchen

Busy Day Chicken Rice Casserole

I was looking for a version of my mother's chicken rice casserole (a favorite of mine as a child) and found this - it's a more "grown up" version of hers, and a new favorite with my family. I made a half recipe, so omitted the can of cream of celery soup, but used a teaspoon or so of celery salt in it's place. Followed another reviewer's edits and used half milk, half cup of water, also mixed half of the onion soup mix into the rice, sprinkled the rest on top with some bread crumbs. Heavenly comfort food!

Lime Glazed Leg of Lamb

I made this in my crock pot instead of on the grill - same ingredients for the glaze, just pour it over the meat, then occasionally spooned over the meat as it cooks. Fantastic!

Sweet Grilled Corn

Fantastic! I sampled the butter mixture as I was applying to the corn, it was so good I made more to put on sliced potatoes and onions - wrapped them in foil and grilled alongside the corn! (hint - to make the mixture easier to spread on the corn, pop unmelted butter in the microwave for 20 seconds, then mix the other ingredients in. It makes a thicker paste and is easier to spread)
