Best Tuna Melt (New Jersey Diner Style)

Excellent light meal for a hot night here in Pensacola! I did use some ciabatta bread that I had on hand. I broiled that until toasty and then topped with the tuna (made exactly as stated) and then the cheese, tomato, and cheese. Baked that for about 10 minutes at 425. The tuna was juicy enough, I was afraid it might be too dry. I'll make this again for a easy meal on a hot night.

Pineapple Angel Food Cake I

This recipe is all over Pinterest but none of the links work so I searched here and waalaaa.. here it is! I love this stuff, almost spongey but not too sweet. I like to put a bit of low fat whipped cream on top.

Alyson's Broccoli Salad

I took this to a potluck this weekend and it was a HIT! I used craisins instead of the raisins. Otherwise, followed the recipe. Perfect sweet/tangy combo in the dressing. I hadn't made this for years and it was fun to bring to our party. Glad I found this recipe again.

Uglies

So easy but yummy! I made 8 uglies out of 1/2 lb of hamburger. My hubs liked them too. Something about the flavor of the bbq beef in the biscuits.. baked up perfect in 15 minutes. I'll make these again when I need a quick dinner.

Amazing Slow Cooker Chocolate Cake

Rich, dark chocolate cake that is so easy. I cooked on low for 3 hours in my 6 qt Hamilton Beach crockpot. I then unplugged it and left it sit overnight with the lid on. Perfectly done, not too heavy but a great chocolate treat. I did use Egg Beaters but followed the rest of the recipe. I'd make this again. Serve with a dollop of whipped cream. Yumm!

Crab and Swiss Melts

These were tasty but a little too cheesey for us. I added a dash of Ol'Bay seasoning and used only 6 oz of cream cheese and about 3 tablespoons of low fat mayo. I also used the fake Krab stuff and put it on my homemade bagette.

Awesome and Easy Creamy Corn Casserole

I made this with I Can't Believe It's Not Butter and fat free sour cream. It was delicious but it makes a lot for just two. We had it a couple times then the rest went in the garbage. I'll have to wait to make it again if I'm taking it to a potluck or such.

Saltine Toffee Cookies

I made this last night and took it into the office today. It was a HIT! No one could believe it was made with saltine crackers. So easy. I made sure to have a good rolling boil and then boiled for 3 minutes. The baking it was the perfect ending. I used 1 cup of mini chocolate chips and 1 cup of Heath Bar bits and about 1 cup of toasted pecans. Next time I'd put the pecans on right when it comes out and then sprinkle on the chips. A lot of the topping came off but it was still delicious. Thank you for this great recipe.

Mel's Crab Salad

Excellent flavor, consistency and visual appeal. I'm not very keen on the light Ranch but it adds kind of tangy zip to this. I followed the recipe exactly and it does remind me of the Golden Corral recipe but I know this is low fat. Oh, I also used reduced fat Helmans Mayo, 15 cal a tbls. So it's pretty low fat too.

Cindy's Slow Cooker French Dip Beef

Excellent french dip beef. I toasted ciabatta rolls, filled with succulent roast beef, and then dunked into the great au jus made by the ingredients. This is one of those easy but really tasty meals that can be made on a busy day.

Iced Mochas

Fantastic treat. I used 3/4 cup frozen coffee, 1 cup skim milk, 2 T chocolate syrup and 2 packets of Splenda sweetener. Yummy, I know this would have cost $5 at the coffee shop.. and I know what's in this one!

Baked Oatmeal II

I halved the recipe and used a 7x5 inch glass dish. I sprayed the dish to be sure it released. I, too, served this with milk and my husband and I enjoyed this for an easy breakfast that is filling. I would like some walnuts in it next time for a more flavor. Thanks for the recipe Blanchl.

Peanut Butter Haystacks

These bring back such memories. Easy peasy when you use the microwave. It only took about 50 seconds and it was ready. Put them on a sheet pan and into the freezer. Had our little desserts in about 15 minutes. My kind of recipe!

Ham Bone Soup

This was fabulous! The flavor was so good and I followed the recipe 90%. I used a huge frozen ham bone and added a can of white northern beans and a can of pinto beans. Otherwise, followed the recipe using chicken broth instead of water and cubes. I put it on high for 1 hour then on low for about 10 hours. Absolutely delicious, no extra seasoning needed for us. It makes A LOT, so be prepared for company or big freezer space!

Cindy's Lower Fat Chicken Enchiladas

This was excellent, not spicy at all but can be tweaked to add the heat you like. Using the fat-free sour cream was fantastic, and also the reduced fat cheeses worked fine. I'll make this again. I served it with Mexican Rice II from AR, and they made a perfect meal together.

Ham Tetrazzini

This was great comfort food. I, too, had some left over ham to use up and saw it on the buzz this morning. I added about 1 tsp of minced garlic along with salt, pepper and a pinch of cajun seasoning while sauteing the onion in only 1 tbls of butter. I used chicken broth instead of water and and 98% fat free cream of mushroom soup. I followed the rest of the recipe exactly. It's more than 4 servings for us but that's perfect, I'll have lunch left over.

Appetizer Mussels

These were fantastic. I used regular tomato juice and a jar of calm juice, Chardonnay, garlic (reduced by at least 1/2) and then lite butter at the end. I also used some fresh parsley to brighten it up. Fantastic taste. I will use this recipe again. We dipped our toasted french bread in the juice.. it was just awesome. Thank you Casey52 for a wonderful, easy, and FAST recipe.

Healthier Broiled Tilapia Parmesan
