Hello all my AR and Recipe Exchange friends!  Woooo, what a week!  I didn't realize how going back to work would work but it's going great.  I followed last weeks menu pretty great and found that we really loved the chicken stroganoff from the menu.  I also have made this cake twice in the past week (It Won't Last Cake) and it's so delicious.  I "healthy" it up by using 1 cup applesauce with 1/3 cup canola oil, Egg Beaters, 2 cups Splenda, 1 cup sugar and only 1/2 cup nuts.  It's fantastic and somewhat healthy! 

I'm trying to include meals that will have left overs for me to take to work the next day.  So far it's working very well.  I have access to a large cafeteria but I'd still rather eat my own food as well as saving money!  I'm working at a very large processing factory in the safety department.  It's an office job and I'm really enjoying the men and women I'm working with.  I sure hope this can turn into a permanent job.  I've learned that they had to let a woman go last November because she was stealing from the job (after being employed for 15 years) and so I'm filling her position (somewhat at this point) so maybe there is hope to get hired on!

I sure miss being on the Recipe Exchange and to Miss Witchy Woman, thank you from my heart for helping me out with our project!!  I usually get on about 6pm cst to check into AR but haven't been posting much.  I really do miss it though.  If you want to talk to me either post after 6pm or on my blog as I check those comments each evening too.

Well, on to the menu for this week.  I so enjoy all the comments that are made on my blog, knowing that I'm helping others to get their own menu plans going!  I'm always open for suggestions and new recipes to try.  Now I'm really looking for quick, nutritious, and something even my non-cooking husband can help with! 

Monday - Jan 11 - Easy Slow Cooker French Dip

Tuesday - Jan 12 - Eggs Benedict with the Knorr brand hollandaise sauce.  We both so enjoy breakfast for dinner and it's something that's quick and can be made healthy too!

Wednesday - Jan 13 - Crispy Chicken Parmesan (this is so simple but soooo good) with angel hair pasta.  Green salad with FF salad dressing.

Thursday - Jan 14 - Neat sloppy joes.  I get the 93% lean ground beef from the commisary and that's the only kind of ground beef I use.  It's so delicious and they had a sale on it Saturday for only $1.96 per pound.  When a pound can feed the 2 of us quite well, it's one of those cheap but delicious meals.

Friday - Jan 15 - first off, TGIF!!!  Frozen Kyle's Stew lefover.  Yummm.. it will be perfect after a long week at work not to cook dinner!

Saturday - Jan 16 - Linguine with Shrimp and Tomatoes. (made with angel hair pasta)  This is my recipe but I still love it.  I'll use canned tomatoes since fresh ones suck right now. 

Sunday - Melt-In-Your-Mouth Meatloaf.  Mashed potatoes and buttered carrots.  Comfort food at it's best!

Hi Cindy! I am glad you are enjoying your new job and the people also. Your menu looks great. Your menu blogs inspire me. Now I just need to gather a weeks worth of recipes for myself! Off we go!

Hi there Cindy, I too have been busy at work last week. I worked 4 days and got called to work on Friday for tomorrow, the school I was at last week. They called the sub desk and asked for Me to come back on Monday! Your menu sound really yummy:)MMMM Take care.

Is it possible that in this time "of adjustment" with your new job that you husband would be willing and able to come up with dinner one night a week?

well....finally a blog that fits my interest... i am a planner and love new recipes as well as having leftovers that i sometimes use to make makeovers like pork roast one night and bbq pulled pork later in the week.... cant wait to see what you have in store for us! very nice blog!!!have a great day!!!

About Me
I grew up in Stockton, CA and then lived most of my 1st married life in Lemoore, CA. We raised our 3 boys (twins and one more 20 months later)up together but when the youngest son graduated from high school, I realized life was too short to stay in an unhappy, dead marriage. After 23 years, a divorce and a new life. I moved to the Biloxi, MS area and met my wonderful husband now. He is all I could ask for. We have a kitty and a camper and we love them both! She camps with us all the time. I quit my job in August, '08 and my husband is retired (again) so we are enjoying our time together. ***UPDATE*** I'm working again and really liking my job. I don't have to bring it home with me and it's 32 hours per week, which works out perfect. Very happy to report that we are very happy again with a new job!!!
My favorite things to cook
My new favorite is finding low fat, healthy recipes to try. I'm really up for anything to cook.. it's truly my hobby.
My favorite family cooking traditions
Right now I would have to say that having a fish fry is the closest thing to a tradition I have. Not healthy but it sure is good! Fried fresh caught fish, hushpuppies, okra, french fries. All deep fried and all soooo good!!
My cooking triumphs
Beef Tenderloin With Roasted Shallots from this site. I served it to guests and they could not believe that this was a home made meal. For something so easy it's the best meal I've ever made. Also feel very good about my submitted recipes. I'm not one to usually make something up but I like to follow recipes and then maybe make a few tweaks to our liking and needs.
My cooking tragedies
HAHA - It still makes me laugh. My very first meal I cooked for my 1st husband was supposed to be eggs, bacon and pancakes but the skillet I tried to use was not a non-stick. Needless to say.. we had scrambled eggs, torn up bacon, and worst of all, scrambled pancakes.
