Low Carb Jambalaya

This was delicious. Having become very tired of our low-carb diet, we needed something that really satisfied. This fit the bill perfectly. On the spicy side for some of us, but others loved the heat! Thanks for a great recipe.

Tomato Mozzarella Salad

While we loved this, I'm really giving it 4-1/2 stars because we ended up adapting the recipe. As written, this is lacking something ... I gues we're not traditionalists! To make it 5 star, we used fresh mozzarella sliced thin (pre-sliced is too thick) and added a splash of balsamic vinegar. We did make it often enough, that I plan to grow my own basil next year!

Sausage Egg Casserole

Quick and easy. A very good option when less bread is wanted in the casserole. We thought the chilies were mild, but a good addition.

Awesome Carrot Cake with Cream Cheese Frosting

I've been using this recipe for years and everytime I make it someone wants the recipe. Dense and delicious. I do, however, use my own cream cheese frosting recipe.

Raspberry and Almond Shortbread Thumbprints

Delicious! They do take a little time, but the effort is worth it. Made these for a wedding cookie table and they added a lot of color. A new "keeper" for the cookie file.

Zucchini Brownies

Very easy, delicious and a great way to use zucchini. They are dense and texture is highly dependent on how wet your zucchini was during preparation. No eggs! (Which is great for our egg allergies!) They are not "bitter," that's the taste of real cocoa!

Jalapeno Chicken II

We love these in the summer and can't wait for the jalapenos to come in from our garden! Like another reviewer, we use two pieces of bacon to hold everything in and filling whole jalapenos instead of halves retains more cream cheese. Because we use a grill basked, toothpicks aren't needed.

Sunday Best Fruit Salad

Excellent. Peach Pie Filling does work very well. Pineapple juice did a beautiful job of keeping the apples and bananas nice. I used gala apples and they provided a crisp crunch to the salad. Also added grapes, mandarin oranges and raspberries. Tip: if you don't want the fruit to mascerate too quickly or become too wet, then add the peach pie filling just before serving. And because I don't like fruit salad that is overly sloppy, I only used enough of the pie filling to lightly coat.

Unstuffing Side Dish

Asparagus Casserole

Cut asparagus worked well, although not as elegant. Will probably use larger cooked shrimp next time instead of canned salad shrimp. The salad shrimp got a little hard during cooking.
