About this Cook
I am a 34 year old mother of two - both under the age of 3! My husband and I both work full time, so cooking a quality, healthy, fast meal is always a challenge. My husband and I love to take our girls camping, we love to watch Pittsburgh Steelers Football, and Atlanta Braves baseball. So, tailgating food is another favorite :-) I was introduced to Allrecipes.com by a friend at work - my favorite feature is the search by ingredients. So, so, handy...plus, I love that the system creates my shopping list for me. Anything to save time!!!

My favorite family cooking traditions
I love cooking for the Holidays - especially Christmas. Our biggest family tradition is to have a finger food feast on Christmas Eve. Christmas cookies have always been a huge tradition for us. My mother always made every single holiday special, and my biggest desire is to do the same for my girls!
My cooking triumphs
Last year I made my first cheesecake! Of course, it couldn't just be a regular old fashioned cheesecake. It was a pumpkin spice cheesecake with pecan sandies crust and pecan topping. Our Thanksgiving was fantastic!
My cooking tragedies
I was going to make brownies - FROM A BOX - for my husband and his friends because they were getting together to watch a football game. I switched the measurements for the water and oil. Needless to say, the brownies were a huge flop.

Best Ever Hot Artichoke Dip
I didn't have marinated artichokes in my cupboard so instead I used regular canned ones and added garlic to the recipe. I baked it and then served it in a bread bowl with garlic bagel chips on the side. I wish that I had read all the reviews b/f I made it b/c I didn't keep it warm. But, that didn't stop people. I served it at a baby shower and it was a huge hit. And one big bonus? Once the dip was gone, the bread in the bowl was greasy and cheesy and garlicy :-) Mmmmmmm...healthy :-)

Fruity Curry Chicken Salad
I absolutely LOVED this recipe!!!! I served this to 20 woman at a baby shower and it was a huge hit. I used red grapes, more curry than the recipe called for, and I made it the night before (these were all suggestions in reviews) and it was AWESOME! I made wraps with it. I have the last little nibble in a bowl in the fridge right now...waiting for the craving so that I can enjoy the last bite :-)

Garden Tomato Salsa
As is, this recipe is pretty basic. It's a good launching point. When I went to the Farmer's Market with this recipe in hand, I didn't stop with the required ingredients. I used green pepper, but also yellow, red, and purple. Each has it's own flavor, so it brings an incredible blend to the salsa. Also, I didn't use pickled jalapenos. I used fresh. It had some kick, that's for sure! I used apple cider vinegar instead of red wine. AND, I added more cilantro (it's one of my favorites). That's the glory of salsa......it's an empty canvas waiting for an explosion of taste and color!!! My mother in law (who is Mexican and can make INCREDIBLE salsa) was even impressed - a rarity :-) I will refer to this recipe in the future, but I recommend using this as a springboard for creativity!
