We really loved this recipe. I wanted to to scale back the fat and calories though so I cut both oils in half, upped the soy sauce and vinegar to taste and boiled the noodles according the the package directions instead of frying. Yes they don't have the "crunch" to them but they absorb the dressing and are extremely tasty. I also added some garlic powder and extra green onions and sesame seeds.
Using the boiled noodles makes this a GREAT make ahead/potluck dish too. Just make sure you rinse them, drain them very well and make sure they are cool before adding the the lettuce mix. (Also I have 3 little boys and I used ranch on theirs instead of the asian dressing and they scarfed it up!)
