About this Cook
I am a stay at home mom to 3 wonderful boys ages 2, 4 and 6. Since I am lucky enough to be at home I make sure I make as much of my food as possible from scratch. I love to cook and bake and people love getting an invitation to meals at my house.
My favorite things to cook
I love to try anything. The only thing we don't do is seafood, I have tried and people who like seafood say I am really good at it but I just can't get the taste for it.
My favorite family cooking traditions
My grandmother is a wonderful cook and I have used many of her recipes but nothing specifically traditional in my family.
My cooking triumphs
I have perfected a recipe that I am submitting in the next Pillsbury Bake Off and possibly make to sell at our local farmer's market. Sequim is famous for its lavender and I have created the best Sequim Lavender Lemonade Snickerdoodles. If you have the opportunity to try lavender don't pass it up!! It is WONDERFUL!! I even make Lavender Steaks that are fabulous. The key is, just like any other herb, do not use too much! Alot of people over season when using lavender and it can ruin a meal.
My cooking tragedies
The only cooking tragedies I have had involve a large batch of rancid flour! YUCK~

Simple Whole Roasted Chicken
This recipe is great as is! I personally like the salt reduced by 1/2 (I am somewhat salt sensitive and bloat up) but even with the full salt it is GREAT! My husband and 3 picky boys LOVED it. Thank you for a GREAT, EASY Sunday chicken recipe.

Asian Chicken Salad
We really loved this recipe. I wanted to to scale back the fat and calories though so I cut both oils in half, upped the soy sauce and vinegar to taste and boiled the noodles according the the package directions instead of frying. Yes they don't have the "crunch" to them but they absorb the dressing and are extremely tasty. I also added some garlic powder and extra green onions and sesame seeds. Using the boiled noodles makes this a GREAT make ahead/potluck dish too. Just make sure you rinse them, drain them very well and make sure they are cool before adding the the lettuce mix. (Also I have 3 little boys and I used ranch on theirs instead of the asian dressing and they scarfed it up!)

Crustless Apple Meringue Pie
Nice low fat pie like dessert! After reading other reviews I stepped up the cinnamon and sprinkled on about 1/4 c brown sugar before baking. It is a low fat pie though, but it gives me enough to satisfy the apple pie craving.
