Gingery Quinoa-Stuffed Acorn Squash

I didn't measure anything out, except the quinoa, of which I only used 1/2 cup (precooked). This turned out absolutely delicious, and although it wasn't my first time eating quinoa, it was my first time eating acorn squash. And I can't wait to eat the leftovers tomorrow! :) By the way, I preroasted 4 squash halves, and with reducing the quinoa, the amount was perfect for the squash I had. Thanks for a great recip!

Roasted Swiss Chard with Feta

AWESOME! I've never tried swiss chard and neither had my family. I made this exactly as instructed (except I added a touch of minced garlic, and a few slices of cooked bacon, it had to be used!) and it was amazing. Not one single piece of anything was left in the dish. Try it, you won't be disappointed! :)

Butternut Squash Soup

I followed other reviewer's suggestions by roasting the squash first, using 8 oz of cream cheese, adding a golden delicious apple, some sage leaves, and using chicken stock instead of bouillon. It was a little spicy for my mother's taste, but she's kind of a wimp about spice :) I thought it was great! Thanks for a great recipe!

Quinoa Side Dish

This was my first attempt at quinoa and I LOVED IT. Even my picky 12 year old ate it and didn't gag :P I didn't have any fresh herbs on hand (shame on me!) so I used dried Italian seasoning instead, and probably more garlic and lemon than was called for, but it was delish. I will definitely be making more of this and less of the processed white rice I've become so addicted to. Thank you!!

Yum Yum Sauce

As someone who used to run an Asian restaurant, I can tell you we never put anything tomato based in our yum Yum Sauce. Other than that, everything else is right.

Zippy Summer Shrimp

I followed the recipe, except I only used 1 lb of frozen, peeled, and deveined shrimp. I also only had dried basil, so used 2tsp of that. When everything was finished (super quick!!) I tossed in some cold leftover pasta I had in the fridge. Absolutely perfect meal with a fresh salad. Even my 11 year old son loved it! :) Thank you!

Florentine Artichoke Dip

This is MY go to recipe for spinach dip. I get rave reviews every time I make it, someone always asks for the recipe, and there are NEVER any leftovers. I tweak it sometimes, other times I make it exactly as written. When I do make changes, I add some finely diced red onions and in place of the mayo I use half unflavored greek yogurt and fat free sour cream. I like it best with the changes, but no matter what, it will always be a hit!
