Unbelievable Chicken

This is so great. I used chicken thighs. I didn't have time to marinate, so I mixed up a double batch of the sauce and poured it over the thighs and put them directly in the oven for 1.5 hrs at 325. (I like the skin crispy). DON"T use the olive oil because the thighs have tons of skin. I only had regular mustard but it tasted fantastic. It was more moist than the chicken breasts and the extra sauce tasted amazing on the side dish noodles.

Chinese Chicken Salad II

Really dressing. I added quite a bit more pepper and some sesame oil. I didn't have poppy seeds but I didn't miss them. It was a good balance of vinegar and oil.

Creamy Lemon Squares

This was easy and really good. I like things lemony, so I cut the sugar by 1/4 cup and added a little more juice. I didn't add the lemon gratings because I don't like the texture, but this is a great recipe!!

Cherry Tomato Salad

This is gorgeous and delicious. I used Kalmata olives, green stuffed pimento olives (because that is what I had). I reduced the oil to 1/4 cup and added two tbsp of lemon juice to give it more kick and round out the flavors. I haven't tried it with feta cheese, but that sounds awesome too.

Old Fashioned Peach Cobbler

This was fabulous. I used canned peaches and premade uncooked crust and it was still delicious. I added 2 TBS tapioca to cut down on the soupiness and it worked great. Thanks!
