M's Sloppy Joe Sauce

I doubled this recipe. Instead of a green bell pepper, I used a large red bell pepper. I happened to be out of brown mustard, I used dijon instead. I made no other changes. I served this on kaiser rolls with shredded sharp cheddar cheese on top. My kids really loved this, which surprized me. They loved how spicy it was and they literally had their sloppy joes gone in two minutes, mess and all. Then they asked for seconds. The ones who were more lukewarm about it were my husband and I.

Green Beans Kids are Sure to Eat

Instead of canned green beans, I used Steamfresh frozen whole green beans. Though the grownups were lukewarm about these, I definitely got two thumbs up from both kids--even the picky one. Recipe title is no lie. NO leftovers.

Peanut Butter Breakfast Syrup

I used evaporated milk in this recipe, plain ol' Jif (I don't keep natural peanut butter on hand) and folded in a half cup of chopped salted peanuts. I did not try this myself but my kids told me it's fantastic. Especially over homemade whole wheat waffles. ;)

Alfredo Chicken

I cut back on the garlic powder a bit, used Newman's alfredo sauce, folded in a good amount parmesan cheese and fresh ground pepper and one package Steamfresh cooked/drained frozen broccoli. Everyone liked it, especially my oldest boy. He ate two bowls. Next time, I would add a little more pasta because it seemed like to me that even with the broccoli I added, there was more sauce than pasta. GREAT quick all-in-one casserole that saved this working mother. NOTE: REWARMS WELL. If you want leftovers for the next day or have family that eats bigger, doubling this is necessary.

Maple Zucchini Muffins

Tex-Mex Migas

I used one whole tomato and I sauteed a little fresh minced onion and garlic in the butter before adding the green chilies. Oh my goodness. This was SO good. The kids really enjoyed it, too. NO leftovers.

Brown Sugar Brats

Made these in the crockpot. Used Johnsonville "sweet" brats and instead of all water, I used half pineapple juice. The smell of these cooking is IN-sane. I was actually quite surprized by the end result of cooking it in the crockpot. I thought that the onions and apples would be inedible because they cooked for so long but once I drained off all of the liquid, the apples and onions made a kind of relish that went perfectly with the brats. Flavor was very good. Family ate every bite. I will most definitely make this again.

Cheese Biscuits I

I don't keep Bisquick on hand--what I did was used two cups AP flour, two teaspoons baking powder, half teaspoon baking soda and a quarter teaspoon salt. I wanted more of a wetter-drop biscuit so I increased the milk to a full cup and added half of a teaspoon of garlic powder to the biscuit batter. Very simple biscuit recipe that was inexpensive to make that the family enjoyed. NOTE: This made eight biscuits for me using a heaping 1/4 cup measuring cup.

Baked Ravioli

I cut this recipe in half. I did not use the sauce recipe, I instead used the recipe from Enhance That Jar of Spaghetti Sauce, which is also from this site. I layered this like I would lasagna. One whole Walmart brand ravioli was just enough for a 8x8 pan. I started with the sauce, did a layer of ravioli, then a layer of faux ricotta (cottage cheese, parmesan cheese, egg, dried parsley) and I just repeated the layers and ended with the parmesan cheese. Everyone enjoyed it. Great way to make dinner with pantry/freezer items and lighten the food budget.

Enhance That Jar of Spaghetti Sauce

I omitted the butter and increased the olive oil (to be honest, I have used butter in a tomato-based sauce before and I did not like the end result). I left out the meat because I was using this sauce for a Baked Ravioli recipe. I also cut back on the rosemary a bit because it can be quite potent and I didn't want it overpowering the sauce. I also added a couple tablespoons of brown sugar. I let this simmer for a little over two hours. My jarred sauce was a more expensive quality and I used a good bottle of burgundy. VERY GOOD. You would have thought I cooked this from scratch!

Magical Egg Salad

Because we do not like sweet pickles, I used equal amounts (maybe more) of chopped garlic dills. I also added a little garlic/onion powder. Interesting but delicious egg salad. My son and I shared it and we both really enjoyed it. I will make it again.

Tender and Easy Buttermilk Waffles

Bulk making waffle day--I doubled the recipe. I only made one change, I used half whole wheat/half AP flour. After all the dry ingredients were folded into the wet, I noticed that the batter seemed to be quite thin. I ended up adding an additional cup of AP flour. These puffed up nicely and turned out well. Using half whole wheat flour made them sturdier and more filling. I will use this recipe again.

I took another reviewer's suggestion and tried this with Rolo candies. After they melted a bit, we put them between two graham crackers. Holy cow--were these decadent! The kids are still talking about them.
