P B and J Muffins

I only used 2 teaspoons of baking powder--I made no other changes. When filling the muffin cups, I was careful to fill the muffin cups with only 1/3 cup of batter before spooning in jam. I then divided the rest of the batter between the 12 muffin cups. Baked at 350*, these muffins were done at 22 minutes. I got exactly 12 biggish muffins out of one recipe. The family enjoyed these. NOTE: I was able to use store-brand peanut butter in this recipe. Sometimes, when you bake with non name brand peanut butter, you get unsavory results. Not so with this recipe.

Cheesy Chicken and Salsa Skillet

I used two red peppers instead of one green and a homemade salsa. I did not try this myself but I heard that my family liked it--NO leftovers. This rewarms well.

Whole Wheat Peanut Butter Banana Bread

I did not have reduced fat peanut butter on hand--I used plain ol' Jif. I also did not have whole wheat pastry/bread flour, I used regular whole wheat flour. I did make muffins out of this recipe instead of one big loaf--I got eighteen medium sized muffins out of one recipe. Baked at 350, they were done at 20 minutes. Nice, basic banana bread recipe that is lightly sweetened. We wished there was more peanut butter flavor but that can be easily solved next time by cutting back the bananas by a half cup and adding in more peanut butter.

Baked Oatmeal

Instead of cranberries, I used raisins. I also increased the amount to a heaping half cup as we REALLY like raisins. This is seriously decadent--like eating dessert for breakfast. EXTREMELY rich. I poured a touch of cold milk over the top of each serving which cut the sweetness a bit. We absolutely LOVED this. NO leftovers.

Chocolate Bundt® Cake

Instead of chocolate chunks, I like to use a whole package of mini chocolate chips. Halfway through baking, I take a piece of foil and cover the cake so that the top does not burn. My family loves this bundt cake--I like to serve it with either a dollop of Cool Whip or a scoop of vanilla bean ice cream.

Garlic-Parmesan Croutons

If you run the baked croutons through the food processor to a fine consistancy, these will also make great "italian" bread crumbs--way better than the processed brands. THIS CAN BE FROZEN. You can also use leftover hamburger or hot dog buns and get the same result.

Old Hamburger Bun Croutons

I do bake mine a little longer--it really depends on how quickly the buns brown up. If you increase the spices and run the baked hamburger buns through the food processor to a fine consistancy, these will also make great "italian" bread crumbs--way better than the processed brands. THIS CAN BE FROZEN.

Very Yummy Croutons

This is exactly how I make my croutons only I use garlic powder and add only a little salt (I don't like my food overly salty and we like to control our salt intake). I also add a little dried parsley and fresh ground pepper.

Chocolate-y Iced Mocha

I use regular milk in this recipe. I like to throw the ingredients for this into a small Ball jar, slap a lid on it and shake until the ingredients are well combined. My kids especially like this (though I use decaf for them). This makes a good blended drink, too.

Iced Cappuccino - Low-Carb Alternative

I don't use almond milk, any kind of cow's milk works just as well BUT the nonfat does froth better. The cream cheese was an interesting addition--I didn't think I would like it but it was actually quite good. I did change this recipe a bit and added chocolate syrup. Interesting coffee drink!

Pop Cake

I used a yellow cake mix and orange Jello. The "frosting" only needed one cup of milk--two would have made it too runny. I topped the cake with drained mandarin oranges. Not for adults--psh. This is my go-to summer cake. Any kind of jello or soda you use, it always turns out fantastic. My family LOVES this dessert, the adults especially.

Easy Taco Skillet

I used one box mexican rice in place of plain converted rice and equal amounts V-8 tomato juice instead of water. I also used a homemade taco seasoning. I served this with additional taco-type toppings (chopped tomato, sliced olives, chopped red bell pepper, sour cream, salsa, crushed Doritoes) and we made taco bowls. Nice, quick ECONOMICAL dinner. This would make a good filling for mexican stuffed peppers.

Mamabear's Potato Salad

Instead of Miracle Whip, I used Hellman's mayonnaise. I did not add the whole amount, I folded in a little at a time until it was the consistancy I was looking for. I also added in a good amount homemade DRY ranch dressing mix. Very tasty. My husband says this was even better after dinner, as a midnight snack. The longer it sits, the better it gets.

Super Quick Biscuit Squares

Very sturdy biscuit, not bad flavor but the baking powder taste is very prominent. Reminds me of my Grandma's Baking Powder Biscuits. Pairs well with sausage gravy.

Quick and Easy Mexican Pizza

I skipped the parmesan and I used a homemade salsa. Not a bad snack--I think we would have liked it better had I skipped the frying step. NOTE: I made these on my tabletop griddle and it worked just as good as the oven would have and it didn't heat the whole house.

Italian Breakfast Burrito

I skipped the fresh basil (only because I didn't have any) and didn't bother serving this with pasta sauce. I also used whole wheat tortillas. I was hesitant to serve this to the family because I wasn't sure they would like them......but every single one of us loved it. NO leftovers. Family asked me to make this again tomorrow.

No Bake Peach Pie

I took another reviewer's suggestion and added a teaspoon of pure almond extract. I used a homemade graham cracker crust and topped each piece with a dollop of Cool Whip. Not bad!

Frozen Pineapple Upside Down Cake Martini

I made one substitution--I used Whipped Cream flavored vodka instead of plain vanilla vodka. This is seriously one of the BEST cocktails I have had in a LONG time. My husband seconds this.
