Mother's Whipped Lime Dessert

I used sugar free Jello and fat free evaporated milk. I chose to skip the vanilla wafers and just serve this like a mousse. Though my husband did not care for it, the kids and I thought it was great! I will be making this again soon.

Mexican Chip Dip

One of my go-to potluck recipes. I usually increase the cheese to an obscene amount and add a good amount of hot sauce. This always disappears quickly. The best thing about this recipe is that most of these ingredients are usually on hand and it makes a quick snack for hungry husbands/kids who want something to snack on RIGHT NOW.

Creamy Banana Walnut Oatmeal

I have made this three times so far. Instead of instant oatmeal, I used one half cup of regular oats. I did add a sprinkling of nutmeg. To sweeten it, once I drizzled it lightly with honey and the last two times, I added one packet of Truvia sweetener. I actually microwaved it for three and a half minutes. Extremely filling and gave me enough energy to make it through the morning and do everything I needed to do. This recipe's a keeper.

Quick Potato Salad from Hidden Valley®

Original Ranch Roasted Potatoes

I like to use a homemade ranch dressing mix to keep the sodium lower. If you don't have red potatoes, you can also use baking potatoes. Just cut them in half and then cut them into wedges (think jo-jo potatoes). I like to serve this with homemade ranch dip for extra ranch flavor.

Hidden Valley Bacon and Cheddar Dip

One of our favorite dips. I do double the amount of bacon and use a homemade dry ranch seasoning mix. This can be turned into a quick BLT dip by folding in chopped tomatoes and a good amount shredded lettuce. Also can be made lighter with lite or fat free cream cheese. NOTE: The longer this sits, the better it gets.

Original Ranch Crispy Chicken

If you do not have breadcrumbs, you can use crushed Ritz crackers, crushed croutons or crushed cornflakes. When I make this, I like to use a homemade dry ranch seasoning mix as it helps to keep the sodium low. My kids especially love this, especially when I use chicken tenders and make homemade chicken nuggets!

Baked Bacon Ranch Chicken

I like to make this into a chicken sandwich and make either a chipotle mayo or honey mustard sauce for the bun. I also use a homemade dry ranch seasoning mix to keep the sodium down. I like to serve this with seasoned fries and a green salad.

Crunchy Cheddar Chicken from Hidden Valley®

This works also with breadcrumbs or crushed croutons instead of cornflakes. I like to use a homemade dry ranch seasoning mix and omit the additional salt to keep the sodium down in this recipe. I like serving this with scalloped potatoes.

Strawberry Jam in a Slow Cooker

Mine did not thicken. It's sitting on the counter now and I plan on letting it sit overnight to see if it thickens at all. As of right now, I have chunky strawberry pancake syrup.

Karen's Slow Cooker Chicken Fajitas

I doubled this recipe, skipped the liners, used Pace Cilantro Lime salsa and homemade fajita seasoning. I DID NOT add the peppers, onion and garlic to the crockpot to cook all day. Instead, I sauteed them when I got home, then folded it into the cooked fajita meat. VERY good. I paired this with spanish rice and refried beans.

Mock Caprese Salad

I used "lite" cottage cheese, not fat free. I did not measure my balsamic, I just drizzled a little over the top. Absolutely delicious. I almost licked the bowl. I seriously ate both servings.

Scrambled Eggs a la Charlotte

I chose to saute the onion and pepper in the butter before adding the rest of the ingredients. Though we ate it, I can't say that we really liked the tarragon in the eggs. It's a pretty potent flavor and a teaspoon was quite a lot. This just wasn't for us.

Slow Cooker Buffalo Chicken Sandwiches

Umpteenth time I made this so far. Last night, I tried it with a homemade dry ranch dressing mix (I used a little more than a serving for a little more oomph). My husband tells me that he topped it with shredded mozzerella cheese and served it with a veggie platter with homemade low-fat ranch dip. My husband and kids are still talking about it. For us, this made enough for five loaded sandwiches at dinner and three for the next day's lunch. Always a winner in this house!

Onion and Mushroom Scrambled Eggs

I cut the italian seasoning back to a half teaspoon and added in one more egg. I also used one package of Laughing Cow cheese because I did not have Boursin. I liked this more than the kids did. I would make this again, just for myself.

Pumpkin Banana Smoothie

I doubled this recipe. I threw in two raw eggs and used Truvia sweetener instead of brown sugar. One of the best smoothies I have had in a long time--the kids really liked it, too. VERY filling.

Applesauce for the Freezer

This also works out well in the crockpot. Just throw everything in the crockpot leave it for most of the day and by the time you go to fish out the cinnamon sticks/lemon peel, it pretty much is ready to go. All you have to do is run a hand blender or potato masher slightly. DOUBLES WELL.

Jalapeno Ranch Dressing

I used my No Guilt Ranch dressing as a base for this instead of a bottled/packaged dressing. This took my recipe to a whole new level. I made a veggie platter for dinner and I swear we ate over half of this dressing in one sitting. It's FABULOUS. One of the best ranch dressings I have. EVER. HAD.

Breakfast Sweet Tooth

Add in a frozen banana and it tastes just like banana bread! Can be made lighter with nonfat milk and Truvia as sweetener. If your banana is ripe enough, you don't even need sweetener!

Kiwi-Banana-Pineapple-Orange Smoothie

I doubled this recipe. I did not have coconut water, I used equal amounts coconut milk. I also used honey instead of agave nectar. Very good--my kids and I really enjoyed it.
