Beef Tips and Merlot Gravy with Beef and Onion Rice

The first step didn't make any sense to me......so I altered it. I kept the flour and garlic powder but I also added onion powder and fresh ground pepper. I dredged the meat in the flour mixture and browned the meat. I did not bother transferring anything to the crockpot, I just added it all and once it was simmering, I put a lid on it, turned down the heat and just let it cook down and thicken. It took about an hour and a half to get to gravy consistancy. I served this and though we wanted to love it, it was REALLY salty. I think it might have been different if it had been served over plain rice or even buttered egg noodles.......but I don't know. I apologize, this just wasn't for us.

Slow Cooker Cider Applesauce (No Sugar Added)

I tossed the apples with a tablespoon of lemon juice (to prevent browning and to give it a little tartness) and added a quarter cup brown sugar to this recipe. I also used a combination of apples and even threw in a couple overripe pears! Very nice. GREAT for using in baking.

Melanie's Chicken Biscuits Casserole

I sauteed the onion and a little fresh minced garlic in the butter before adding it to the chicken mixture. I sprayed the baking dish with non-stick spray instead. I added one small package of frozen peas and carrots, doubled the milk and added some fresh ground pepper. Instead of sprinkling the cheese on top, I just added it with the rest of the cheese in the casserole ingredients and brushed the tops of the biscuits with melted garlic butter. This was inhaled by my family, we all really liked it. This was enough for one dinner (paired with a huge vegetable platter with homemade low calorie ranch dip) and one lunch for tomorrow.

Quick Chicken and Stuffing Casserole

This is one of my go-to recipes. If I am low on cash and do not have cheese, I skip it all together. I sprinkle the stuffing mix over the top and drizzle butter over the stuffing before baking. This is also great for after Thanksgiving--just use leftover turkey, whatever vegetables you have left over, leftover gravy and you can even add a layer of mashed potatoes. VERY filling. This is one of my husband's favorite meals.

Pizza Chicken

I doubled this recipe. I used homemade bread crumbs (that I added italian seasoning to) and made the pizza sauce from scratch. I also added italian seasoning, garlic powder and onion powder to the flour. I served this with garlic-broccoli pasta. NO leftovers. The kids especially enjoyed this.

Healthier Pumpkin Bread

I cut this recipe in half to ten servings. Instead of water, I used unsweetened Tazo vanilla rooibus tea and I doubled the amount of spices. I also used pecans instead of walnuts. I made muffins out of this instead of one loaf--I did get 12 muffins from one recipe. Baked at 350*, these were done at exactly 20 minutes. Very moist and flavorful pumpkin bread recipe.

Sweet Banana Almond Oatmeal

This can also be made with cow's milk and be cooked in the microwave. Just combine the ingredients and cook in the microwave for four minutes. Let it sit a minute or two and thicken. Most of the time, I use a ripe banana because it makes it sweeter and then I can omit the honey or any other additional sweetener. This is one of my most favorite breakfasts.

Skinny Shake

Instead of using ice cubes, I used frozen banana chunks. I added two packets Truvia. I drank this when I got up at six and it kept me full until about one. Not bad.

Hot Baked Taco Dip

I used a homemade taco seasoning and a ginormous red pepper instead of green. Because I used Roma tomatoes, I cut up more than one. This lasted maybe 15 minutes out of the oven--the boys inhaled it. I didn't even get to try it. Apparently, it was delicious.

Better Burger Sauce

Instead of sweet relish, I cut up garlic dills and used that instead. I also added a little garlic powder and skipped the extra sugar. My family went NUTS for this. This reminds me of a secret sauce a restaurant in my hometown made for their burgers when I was growing up. I used this on Jam Hands' Copycat Frisco Melt sandwiches. I will absolutely make this again.

VERY good. I ended up spreading garlic butter on one side of the bread and toasting the slices in the oven instead of making the sandwich and toasting it after. I also made a homemade "secret sauce" instead of mixing the two dressings together (I did not want to buy dressing for one recipe, it was cheaper to make my own). HUGE hit. We loved them.

Mama Loves Food!: How to Caramelize Onions in the Oven.

This did not work out for me. I ended up cooking it for almost fourty minutes and my onions started to burn. I ended up transferring them to a skillet and finishing cooking them there to save them.

Granny's Brownies

I followed the recipe exact, only switching out pecans for the walnuts. I did bake these in my Perfect Brownie Pan at 350* for a little over 30 minutes. These are absolutely perfect. One of the best brownies I have ever made. The whole family has fallen in love with them.......they're half gone!

Relatively easy to make with a food processor. My batter was really quite wet for a quick bread recipe. Instead of making one big loaf, I made twelve smallish muffins. Baked at 350*, they were done at 22 minutes. This recipe turned out well. The flavor was good. The look of mine was just not really.......appealing. I think maybe I had wetter ingredients or maybe the sugar was too high or something. The muffins looked really wet, for lack of a better description. They just didn't look like I thought they would look. I would like to try this again and maybe add a quarter cup more flour or cut back on the sugar. I felt weird about using 3/4 cup of sugar with only a cup of flour. I will try this again, then re-review.

V's Apple Bran Muffins

I added a teaspoon of homemade apple pie spice. I made no other changes. These were just okay. VERY dry. This was one of the few times my kids did not finish a whole muffin and they will usually eat 2-3 each in the morning.

Sloppy Joe Biscuit Rounds

I used ground turkey and one whole red pepper. I made no other changes. My husband liked this okay, but my kids were the real fans. They thought the idea of this (sloppy joes in little biscuit bowls) was a great idea. I would use this idea again but use a different sloppy joe sauce next time. NO leftovers.

Easy Pumpkin Dip

I made this for my kids for a "dippable" breakfast, paired with sliced Granny Smith apples and homemade waffle sticks. I did use a quality pure maple syrup in this recipe. My kids ate every bite and all morning all they did was talk about how good it was. NOTE: I actually made this the night before so all I had to do was grab it out of the fridge in the morning.
