Don's Simple Sweet Tea

Before I chilled the tea, I floated lemon rings on the top. Refreshing. My husband had this whole batch gone in 24 hours. I will use this recipe again but I might cut back the sugar just a touch.

Bacon-Cheddar Pinwheels

When I make these, I use softened cream cheese that I've added a little homemade dry ranch seasoning to instead of bottled ranch dressing. It helps keep the fillings on the crescent roll dough a little better and it isn't as wet when you go to cut it. Double or triple this recipe--these go fast!

Easy Pumpkin Pie Smoothie

Instead of almond milk, I used lowfat milk. I also skipped the ice cubes and cut the brown sugar back to a couple tablespoons. Tasty smoothie--the kids and I enjoyed it a lot. Next time, I may just omit the banana and increase the pumpkin.

Grilled Turkey and Swiss Sandwich

I spread dijon on the second bread slice. Instead of cooking this in the oven, I made this into a grilled cheese by melting a little butter in my cast iron skillet and cooking the sandwich in the skillet. Very good.

Willis Farm Applesauce

Incredibly simple. I used Granny Smith apples. I actually threw everything in the crockpot right before bed, set it on low and it was ready to go in the morning. All I had to do is run the potato masher through it. Kids flipped for this--they thought bright red applesauce made with candy was amazing. I spread this over whole wheat pancakes and the kids raved about it all morning. Thumbs up from both of them.

I Love My NUTELLA® Breakfast

I don't often serve this for breakfast but if the kids and I want something sweet and don't feel like baking, I will usually make this. I will usually use sliced bananas or strawberries but it is also good with sliced pineapple or kiwi. GREAT midnight snack.

Pumpkin Pie Muffins

I cut this recipe in half. I only made one change--instead of water, I used evaporated milk. I got twelve big muffins out of one recipe. Baked at 350*, they were done in 22 minutes. Excellent pumpkin muffin. Very moist and full of flavor.

Grandad's Pancakes

The first time I made this recipe, the batter was way too wet and the pancakes were too sweet. Second time I made it, I cut the milk by a scant quarter cup and I cut the sugar back by half. Good pancake recipe but not our family's favorite.

Baked Tomato Mac n Cheese Casserole

I happened to see the recipe submitter's review on using four cups of shredded cheese instead of two. To the sauce, I did add a little hot sauce and a teaspoon each of garlic/onion powder. I happened to be out of Ritz crackers but I did have seasoned croutons--I ran them through the food processor for a rough chop and used them instead. I did not try this myself but the husband and kids liked it, NO leftovers. I would make this again-- this was a cheap, filling meal.

Frozen Peanut Butter Pudding Squares

This is a dessert I make often in the summertime--my husband especially likes these. This also works with different pudding flavors and Nutella in place of the peanut butter. To make it stretch a little farther and a fluffier filling, you can fold in a cup or so of whipped topping.

Restaurant-Style Queso | The PinterTest Kitchen

I doubled this recipe. After cooking it and getting it all wisked together and finished, it was really too thin. I ended up scooping out a half cup of the hot queso and wisking in four tbsp. of cornstarch. I wisked the cornstarch mixture into the cheese sauce and microwaved it for another minute and a half. Then, the consistancy was perfection. Good flavor, could be better. All depends on what cheese you use. Next time, I might substitute beer in place of the water and use a sharper cheese. VERY surprized you could make queso in the microwave!

Beef Tips and Merlot Gravy with Beef and Onion Rice

The first step didn't make any sense to me......so I altered it. I kept the flour and garlic powder but I also added onion powder and fresh ground pepper. I dredged the meat in the flour mixture and browned the meat. I did not bother transferring anything to the crockpot, I just added it all and once it was simmering, I put a lid on it, turned down the heat and just let it cook down and thicken. It took about an hour and a half to get to gravy consistancy. I served this and though we wanted to love it, it was REALLY salty. I think it might have been different if it had been served over plain rice or even buttered egg noodles.......but I don't know. I apologize, this just wasn't for us.

Slow Cooker Cider Applesauce (No Sugar Added)

I tossed the apples with a tablespoon of lemon juice (to prevent browning and to give it a little tartness) and added a quarter cup brown sugar to this recipe. I also used a combination of apples and even threw in a couple overripe pears! Very nice. GREAT for using in baking.

Melanie's Chicken Biscuits Casserole

I sauteed the onion and a little fresh minced garlic in the butter before adding it to the chicken mixture. I sprayed the baking dish with non-stick spray instead. I added one small package of frozen peas and carrots, doubled the milk and added some fresh ground pepper. Instead of sprinkling the cheese on top, I just added it with the rest of the cheese in the casserole ingredients and brushed the tops of the biscuits with melted garlic butter. This was inhaled by my family, we all really liked it. This was enough for one dinner (paired with a huge vegetable platter with homemade low calorie ranch dip) and one lunch for tomorrow.

Quick Chicken and Stuffing Casserole

This is one of my go-to recipes. If I am low on cash and do not have cheese, I skip it all together. I sprinkle the stuffing mix over the top and drizzle butter over the stuffing before baking. This is also great for after Thanksgiving--just use leftover turkey, whatever vegetables you have left over, leftover gravy and you can even add a layer of mashed potatoes. VERY filling. This is one of my husband's favorite meals.

Pizza Chicken

I doubled this recipe. I used homemade bread crumbs (that I added italian seasoning to) and made the pizza sauce from scratch. I also added italian seasoning, garlic powder and onion powder to the flour. I served this with garlic-broccoli pasta. NO leftovers. The kids especially enjoyed this.

Healthier Pumpkin Bread

I cut this recipe in half to ten servings. Instead of water, I used unsweetened Tazo vanilla rooibus tea and I doubled the amount of spices. I also used pecans instead of walnuts. I made muffins out of this instead of one loaf--I did get 12 muffins from one recipe. Baked at 350*, these were done at exactly 20 minutes. Very moist and flavorful pumpkin bread recipe.
