I doubled this recipe. After cooking it and getting it all wisked together and finished, it was really too thin. I ended up scooping out a half cup of the hot queso and wisking in four tbsp. of cornstarch. I wisked the cornstarch mixture into the cheese sauce and microwaved it for another minute and a half. Then, the consistancy was perfection. Good flavor, could be better. All depends on what cheese you use. Next time, I might substitute beer in place of the water and use a sharper cheese. VERY surprized you could make queso in the microwave!
