100% Whole Wheat Pancakes

I did not have buttermilk on hand, I soured whole milk with a couple tablespoons lemon juice. I made no other changes. I have made whole wheat pancakes before and know that it takes a bit for the whole wheat flour to suck up some of the additional liquid so I let it sit for five-ten minutes while the griddle preheated. VERY good pancake. Reminds me of the pancakes my dad made for me on Saturday mornings. Kids loved them.

Creamy Broccoli Salad

I omitted the sugar and instead used one packet of Truvia. I did add a few spices to the dressing to jazz it up a bit (dill weed, dried chives, onion/garlic powder, celery salt, little hot sauce, fresh ground pepper). Very nice broccoli salad. The longer it sits, the better it gets.

Morning Blueberries and Cream Oatmeal

I prepared this oatmeal with water, not with milk. I skipped the creamer and honey--I just stirred in a packet of Truvia and added a splash of milk. This was absolutely delicious. Very filling.

Lime Pear Gelatin Salad

I took other reviewer's suggestions and tried this with raspberry jello instead of lime jello. I also poured it into small tupperware containers as to easier portion control. Oh my goodness, is this GOOD! The kids and I absolutely LOVED it.

Pasta Deli Salad

I had to adjust this recipe to suit what I had on hand because I am on a tight budget this week. I used elbow macaroni, mixed half italian/half ranch dressings (I literally squeezed everything out of both bottles to have enough to go over the salad) and only half of one large red onion. I also did not have salami, I left it out. I did throw in two diced roma tomatoes and one diced cucumber for added vegetables. The kids and I thought it was good but my husband REALLY liked it. He ate two bowls and took the rest for lunch today. NOTE: This salad was a little on the salty side.

Hearty Beef and Two-Bean Chili

I increased the amount of bell pepper and garlic and used all black beans. I did end up throwing everything in the crockpot and letting it cook on low all day. After simmering in the crockpot for a while and then tasting, I did increase the cumin, oregano and I added a good amount ground coriander. This made enough for three dinners--one of chili and corn dog muffins, one for Black Bean Enchiladas for later this week and one portion to freeze for a later date. Decent chili recipe that was not only quick for me to prepare but relatively inexpensive to make.

Easy Garlic Green Beans

Skillet Mac and Cheese & Kielbasa

Interesting way to make macaroni and cheese. I did add a teaspoon each of onion/garlic powders and a squirt of dijon mustard. Both my kids thought it would have been better without the bread crumbs on top. I'd make this again but I think I would play with the recipe a bit.

Mother's Whipped Lime Dessert

I used sugar free Jello and fat free evaporated milk. I chose to skip the vanilla wafers and just serve this like a mousse. Though my husband did not care for it, the kids and I thought it was great! I will be making this again soon.

Mexican Chip Dip

One of my go-to potluck recipes. I usually increase the cheese to an obscene amount and add a good amount of hot sauce. This always disappears quickly. The best thing about this recipe is that most of these ingredients are usually on hand and it makes a quick snack for hungry husbands/kids who want something to snack on RIGHT NOW.

Creamy Banana Walnut Oatmeal

I have made this three times so far. Instead of instant oatmeal, I used one half cup of regular oats. I did add a sprinkling of nutmeg. To sweeten it, once I drizzled it lightly with honey and the last two times, I added one packet of Truvia sweetener. I actually microwaved it for three and a half minutes. Extremely filling and gave me enough energy to make it through the morning and do everything I needed to do. This recipe's a keeper.

Original Ranch Roasted Potatoes

I like to use a homemade ranch dressing mix to keep the sodium lower. If you don't have red potatoes, you can also use baking potatoes. Just cut them in half and then cut them into wedges (think jo-jo potatoes). I like to serve this with homemade ranch dip for extra ranch flavor.

Hidden Valley Bacon and Cheddar Dip

One of our favorite dips. I do double the amount of bacon and use a homemade dry ranch seasoning mix. This can be turned into a quick BLT dip by folding in chopped tomatoes and a good amount shredded lettuce. Also can be made lighter with lite or fat free cream cheese. NOTE: The longer this sits, the better it gets.

Original Ranch Crispy Chicken

If you do not have breadcrumbs, you can use crushed Ritz crackers, crushed croutons or crushed cornflakes. When I make this, I like to use a homemade dry ranch seasoning mix as it helps to keep the sodium low. My kids especially love this, especially when I use chicken tenders and make homemade chicken nuggets!

Baked Bacon Ranch Chicken

I like to make this into a chicken sandwich and make either a chipotle mayo or honey mustard sauce for the bun. I also use a homemade dry ranch seasoning mix to keep the sodium down. I like to serve this with seasoned fries and a green salad.

Strawberry Jam in a Slow Cooker

Mine did not thicken. It's sitting on the counter now and I plan on letting it sit overnight to see if it thickens at all. As of right now, I have chunky strawberry pancake syrup.
