Southwest Summer Salad

I followed the recipe exact only leaving out the avocado (I am sorry, I just do not like it). I did use BROWN rice and fresh lime juice. This salad was AMAZING. No leftovers, we ate every single bit of this salad.

Nutty Banana Chocolate Chip Bread

I eliminated all of the spices (We prefer none in our banana bread--family preferance), I cut the butter back by half and used unsweetened homemade applesauce in it's place and I cut the sugars back by half. I also used pecans instead of walnuts (another family preferance) and cut the mini chocolate chips back to a scant 1/3 cup. I made muffins out of this recipe--outr of one recipe I was able to get 16 biggish muffins. It turned out fabulously. Wonderful texture, VERY moist, lots of good banana flavor and we really liked the addition of the flax seed. Eight thumbs up, from all four of us!

Dad's Creamy Cucumber Salad

I'm sorry, I followed the recipe exact. After I covered the salad with plastic wrap and let it sit, I came back and the bowl was filled with liquid. The salt had continued to pull liquid from the cucumbers and onions which made this thin slurry that made having dressing impossible. This was inedible. I had to throw it out.

Bronco Burger

My oldest son made this whole recipe on his own. We had to make a couple changes due to what we had on hand. We use diced mild green chilies instead of fresh jalapenos (about two tablespoons), used Frank's instead of Tabasco and chili-cheese Fritos. Not bad. We might play with the recipe to make it a little different next time but definitely tasty! We were very proud of him.

Hash Brown and Egg Casserole

I used ground turkey that I added spices to to "fake" pork sausage. I did add a few more eggs, some real bacon bits (I was cleaning out the fridge) and one can of diced mild green chilies. MAN, this was DELICIOUS. I topped my portion with sour cream and homemade salsa.......then went back for seconds. I didn't even mess with my toast. NOTE: Mine took almost two hours to bake. One hour covered and almost another full hour uncovered. Keep this in mind when you make this so you don't almost die of hunger by the time this casserole's done.

Black and Blueberry Smoothie

I took the recipe submitter's suggestion and used 1/2 cup of plain greek yogurt and a half cup of naturally sweetened grapefruit juice. I kept the chia seeds but omitted the coconut butter. Very good.

Sam's Famous Carrot Cake

Famous carrot cake is right. I did not make this myself, my aunt made this cake for Easter. I asked her if she made any changes and she just said she added a lot more shredded carrots. A LOT MORE. She did mention that she was worried about the cake turning out because the batter was very wet.......but speaking as one who had a piece, it was the best carrot cake I have EVER HAD. Very moist, very flavorful. She iced it with Martha Stewart's cream cheese icing. EXCELLENT CAKE.

Savory Bacon Cheddar Corn Muffins

I skipped the bacon and the dry mustard--I kept everything else the same. Baked at 400*, these were done at exactly 15 minutes. VERY moist. The kids especially liked this.

Ed's Macaroni Jumble

I made this ahead of time for my husband to rewarm for Daddy Dinner Night. Instead of ground beef, I used ground turkey. I omitted the seasoning salt but added onion powder, garlic powder, ground cumin, mexican oregano and a little chopped fresh cilantro (for a mexican themed flavor, to go with the chili powder). I made mini corn muffins to go with. I did not get to try this myself--they ate the whole casserole dish full. Definitely a remake. Very cheap to make for those on a budget like me.

Cheesy Cheddar Roll-Ups

I used sweet onion for this recipe and sauteed the onion in butter instead of oil. The grownups liked the addition of the onion, the kids did not. Instead of serving it with plain mustard, I made a honey mustard dipping sauce to go with. No leftovers.

Bop's Broccoli Cauliflower Salad

I don't keep Miracle Whip in the house, I used Hellman's mayonnaise instead. This did need more mayonnaise than what was asked for. I cut the sugar way back to two tablespoons and I used white wine vinegar. Very simple side dish I could throw together before work. The longer this sits, the better it gets. Next time I will take the previous reviewer's suggestion and add sunflower seeds.

Homemade Chili Seasoning Popcorn

I melted a tiny amount of butter (couple tbsps) and added the seasonings to the butter. I also increased the garlic and onion powder. Delicious and most definetly addictive. Next time, I will double the recipe.

Baked Buffalo Wings

I did dry my wings before dredging as to prevent soggy wings. I increased the garlic powder to a full teaspoon and omitted the salt as I was using a salted butter. EXCELLENT. No leftovers. Great for Superbowl Sunday.

Seven Layer Dip I

I added homemade taco seasoning and a small can of V-8 instead of water to the ground beef to give it some flavor. I also folded in one small can of mild green chilies to the refried beans. The boys loved it, GREAT for Superbowl Sunday.

Garlic Bread Popcorn
