Hillbilly Breakfast

Oh my goodness, this was bananas. I used fresh red peppers, onions and a mess of garlic instead of using frozen and I used Chipotle Tabasco. I served this with bacon and fruit salad. Thumbs up from all four of us. Crazy good. I loved how cheap this was to make. Really impressed. WTG, southernshoe! You impressed the socks off of me.

Confetti Beef Taco Salad

I doubled this recipe. I used ground turkey, a homemade taco seasoning, used nacho cheese tortilla chips from Aldi, and I made a sour cream ranch-salsa dressing to go on the top. Even doubled there were no leftovers. Definitely a make again. (Everything in this recipe was bought at Aldi--the whole meal didn't cost more than 8 dollars to make. Not bad.)

Easy Pumpkin Spice Muffins

I just had yellow cake mix so I used that and added two tsp. of homemade pumpkin pie spice. I only had about a half cup of chopped pecans on hand. This made 18 medium sized muffins. I did not try these myself but my kids and husband really liked these. My husband compared them taste-wise to Costco muffins. Definitely a make-again.

Spicy Tuna Fish Sandwich

Ok. So I have made this twice, once with lemon juice and once without. We preferred it without the lemon juice. This recipe as is makes two sandwiches, not four. I don't usually keep relish on hand, I use one chopped garlic dill. I also increased the mayonnaise. The kids and I both enjoyed it.

Creamy Strawberry-Pineapple Smoothie

I used greek vanilla yogurt and frozen strawberries. Honestly, I had to triple this recipe to make three smoothies. Maybe we REALLY like big smoothies, idk. Either way, this was extremely tasty. The kids and I really liked it.

Super Easy Egg Casserole

I had some leftover philly cheesesteak filling that I added to this egg bake. That negated the green onion or red pepper. Because I am doing a Pantry Challenge, I happened to be out of "fresh" bacon so I used a partial bag of real bacon bits I had in my fridge. I also used up some leftover evaporated milk that I had in the fridge instead of regular milk. I made no other changes. After this came out of the oven, I served it with sour cream/homemade salsa on top and made it more filling with baked hashbrowns and buttered whole wheat toast. NO leftovers. I would make this again. Very tasty.

Pineapple-Raspberry Parfaits

I used vanilla greek yogurt and partially thawed frozen pineapple/frozen raspberries. I split this between the kids and I. We ate every bit of it, no leftovers. We loved it.

Green Chile Frittata

I cut the recipe in half BUT I left the amount of shredded sharp Cheddar exactly the same. I did add some garlic/onion powder, some fresh ground pepper and little hot sauce. I made no other changes. I was able to bake this the night before, let it cool and slice and rewarm the next morning. No leftovers. We ate it all.

Sallys Baking Addiction Peanut Butter M&M Cookies. - Sallys Baking Addiction

I followed the recipe exact. Having made peanut butter cookies numerous times, I always use name brand peanut butter. Once you make the mistake of using off brand peanut butter in cookies, you never do it again. These cookies were done baking at a little over eight minutes. Just as Sally described, these were soft, peanut buttery and amazing. I will most definitely will make them again.

Randy's Slow Cooker Ravioli Lasagna

I used half ground beef/half ground sausage and a homemade marinara and I omitted the additional salt. I was able to put this together fairly quickly (and fairly cheaply as well because all of the ingredients were bought at Aldi!) at the start of my day and it was ready to go at dinnertime. I did take another reviewer's suggestion and add cheese in the layers as well as on top. I did sprinkle a good amount canned parmesan along with the shredded mozzerellla, too. The whole family enjoyed it, especially my two kids. We sopped up the additional sauce with white trash garlic bread (softened butter and lots of garlic powder, spread onto sandwich bread and thrown under the broiler). NO LEFTOVERS. Definitely a make again.

I scaled this back to one serving as my "treat" tonight after dinner. I used Walmart frozen pineapple, vanilla greek yogurt and "light" whipped topping. This was heaven. Absolute heaven.

Barbeque Chicken Pasta Salad

For me, this recipe was part of a "Pantry Challenge". I basically plugged a few ingredients in that I had on hand and this was one of the first recipes that popped up. I did scale this recipe back by half. I cannot find jicama anywhere in the area I live, so I just omitted it. I also did not add the jalapeno pepper because I was feeding two kids. To make this a little......cheaper, I did skip the step of cooking the chicken in the barbeque sauce only because I didn't want to overuse the little bit that I had in case I needed it for another recipe. I just cooked the chicken with some spices in my slow cooker for most of the day, cooled it and then pieced it out for the salad. Very interesting take on pasta salad, my two kids especially liked it. NO leftovers. I would make this again.

Chef John's Stuffed Peppers

I used brown rice in the filling and cut the parmesan cheese in half. In the sauce, I cut the beef broth by a quarter cup and added a quarter cup of burgundy. I just happened to accidently forget both the balsamic and the cayenne. I did throw in a few spices to the sauce (Italian seasoning, basil, oregano and a little brown sugar). Before I baked them, I sprinkled shredded sharp cheddar on top. These are the best stuffed peppers we've ever had. One of the previous reviewer's hit the nail on the head that the sauce is what makes this dish. That and the parmesan in the filling. We all loved this recipe, even my picky youngest child. THIS IS AMAZING. Totally making this again.

Thanksgiving Stuffing

I cut the onion back to one big one and added a half cup or so of chopped carrot, used chicken broth instead of water and a mess of fresh garlic. I also went easy on the salt. Everyone in our house loved this stuffing, even the two kids who normally hate stuffing. None of us had ever had stuffing made with bread AND stuffing, it was a huge hit. This may be my go-to from now on!

Epic Mashed Potatoes

I doubled this recipe. Because my baking potatoes were on the small side, I did throw in a couple more just for good measure. I did use homemade roasted garlic instead of regular garlic. We all were MMMMM'ing all through dinner. Very delicious. Definitely a make again.

Easy Herb Roasted Turkey

I used melted butter instead of EVOO and chicken broth instead of water. I also added onion powder. Because I do not have a roasting pan with a lid, I used a roasting pan and foil. This made for a moist bird and a flavorful gravy. We would use this again but I don't think we would use basil again and maybe use poultry seasoning instead of plain sage. THAT IS NOT A REFLECTION ON THE RECIPE, just personal preference. As is, this would be excellent for roast chicken, IMO.

Freda's Cherry Supreme Salad

Instead of strawberry jello, I used cherry. I also used sour cream instead of mayonnaise and pecans instead of walnuts. Different but incredibly tasty. It reminded me of Strawberry Jello Salad but without the crust. I think that I would have liked more of a cream cheese layer but honestly, I think it's personal preference. My kids thought this was amazing, especially my youngest. I would make this again.

Apple Pie Crescents

I doubled this and made my own apple pie spice. My crescents needed a little longer to bake, mine weren't done until almost fifteen minutes. After letting this cool, I served them with vanilla bean ice cream. Eight thumbs up, my whole family loved them. I will make this again.
