Spanish-Style Swiss Chard with Raisins and Pine Nuts

An excellent and easy side dish. Can also accompany chicken, pork or be served with poached or fried eggs. The contrast of the sweet raisins and pine nuts with the chard (or spinach) is really delicious.

Easy Mexican Casserole

This is an excellent recipe. I have been making it for years. When I explained my version to my family in Mexico, they said: here we call it "Pastel Azteca". In my version I use chopped white or red onions instead of green. I sautée the meat with one of each of diced red and green (sweet)peppers and taco spice mix, also I usually use a mixture of grated cheeses: mozarella and cheddar. A hint: if you use whole fresh corn tortillas and layer them with the other ingredients, it turns out like a lasagna! Sometimes instead of adding the beans to the casserole I make frijoles refritos and serve them as a side dish. Along with a green salad. And a bowl of extra salsa picante.

Quick and Fresh Gazpacho

Good and simple recipe for Gazpacho, my sister-in-law makes it this way. I make it the classical way, I use about 1 lb. of tomatoes, 2 cloves of garlic and no onion, plus a good sized piece of stale bread soaked in cold water added to the veggies. That gives it more consistency and makes it a bit thicker. Another spanish variant called Sopa Marbella adds 2 or 3 carrots, giving it a nice slightly sweet taste.

Seasoning For Tacos

Excellent spice mix. Very similar to the one I make with two differences. I add 1 to 2 teaspoons of cinnamon (depending on the recipe I'll use it for: 2 spoons is for chili con carne)! And also just a pinch or two of ground clove.

Mexican Lasagna

In Mexico this is actually called "Pastel Azteca" intead of lasagna. I usually use crumbled tortilla chips instead of whole corn tortillas. I also use two types of cheese together: mozzarella and an orange cheese such as cheddar or mimolette, putting a layer of sour cream sprinkled with paprika and chili powders just under the cheese before baking. As a side dish I make a mexican style rice: chopped onions, red & green peppers sautéed together, add rice, then a broth to cover the rice, add red or pinto beans and some corn, and allow to simmer till the rice is tender. Great together.

Italian Summer Squash Polenta Bake

Delicious... And you could turn it into a south of the border version.. Use cheddar instead of parmesan, salsa or taco sauce instead of spaghetti sauce, and add some mexican spices to the chicken! I'm going to try it this way today!

Couscous, Cranberry, and Feta Salad

Ths is a "first cousin" to the classic Tabouleh... Excellent. I added some chopped walnuts and a little lemon juice. Great side dish for moorish style chicken kebabs!

San Antonio Salad

I'm going to make this for a beach outing tomorrow!!! I have some ripe avocados from the tree in my garden that I will dice in a bowl and mix with some lemon juice, paprika, a dash of chili powder and cumin (to give guacamole flavour)and then place on the salad! Should top it off nicely.

Pumpkin Cheesecake in a Gingersnap Crust

Excellent recipe... It can be turned into a "diabetic friendly" recipe also! Replace the ginger snaps with low-cal cookies and add a tsp. of ground ginger. Replace the sugar with fructose or sweetener (remember to reduce the amount, as fructose and sweeteners have a higher sweetening effect)Instead of maple syrup, add a tsp. of maple flavouring.

Citrus Salad

Easy and excellent I used chopped iceberg lettuce... For an extra taste garnish with a few shrimp or a little flaked cooked whitefish marinated in some lime juice... And/or add a handful of dried cranberries for a colour contrast...

Sarah Contona's Sweet Potato Pie

Pasta with Broccoli and Bacon

Excellent recipe...I do a similar dish without tomato sauce... Instead I use 1 package of cream cheese and 3 ozs. of fresh cream, which I mix together and add to the pasta once the broccoli is cooked... Other than that the rest is the same recipe...Excellent taste!
